Irena Lasenby saw an opportunity. The founder of Zebrina<\/a>, a New York-based company, is launching three globally inspired cream cheeses: Chili Lime Peanut, Passionfruit Black Sesame, and Apricot Ginger Curry. The idea grew out of a habit she\u2019d had since childhood.<\/p>\n

\u201cThe day after I decided to start a food brand, I caught myself mixing cream cheese with berbere, the Ethiopian spice blend I grew up with,\u201d she says. \u201cThat was the lightbulb moment.\u201d She realized cream cheese could be a vehicle for flavors people might not otherwise cook with \u2014 something familiar that could carry something new.<\/p>\n

\u201cCream cheese is incredibly versatile and surprisingly untouched as a category,\u201d Lasenby says. \u201cIt felt like the perfect way to introduce vibrant global flavors into everyday routines.\u201d<\/p>\n

Cream cheese\u2019s mild, creamy base makes it an ideal canvas. It can soften heat, balance sweetness, and carry spices \u2014 but it\u2019s not always straightforward. \u201cDairy is a demanding canvas,\u201d Lasenby says. \u201cThe richness and acidity can change how ingredients behave in ways you don\u2019t expect.\u201d<\/p>\n

Some ideas didn\u2019t translate. Lasenby went to work experimenting. A Thai basil flavor, for example, tasted woodier and more peppery than intended. Others worked immediately. Those experiments helped define what could truly stand up to the base.<\/p>\n

To develop Zebrina\u2019s lineup, Lasenby mapped out cuisines known for bold flavors and began testing combinations. While some flavors nod to specific traditions, she chose names that clearly signal what\u2019s inside \u2014 like Chili Lime Peanut \u2014 while leaving room for deeper storytelling.<\/p>\n

That approach reflects a broader shift. Many consumers are now familiar with ingredients like gochujang, tahini, and black sesame, but don\u2019t always have the time or confidence to cook with them. Flavored cream cheese can act as a bridge: recognizable but layered with something new.<\/p>\n

After 15 years in New York hospitality, Lasenby saw that people want to cook more adventurously, but not necessarily more complicatedly. \u201cOne of the most common things I hear is, \u2018I never would have thought to use cream cheese like this,\u2019\u201d she says.<\/p>\n

Zebrina\u2019s chef collaborator, Vanessa Bee, has explored that potential with dishes like ube waffles topped with Passionfruit Black Sesame cream cheese, and crab rangoons filled with Apricot Ginger Curry. Chili Lime Peanut has been paired with carrot tinga tostadas, while Apricot Ginger Curry has topped crab cakes.<\/p>\n

Still, the appeal is simplicity. A spoonful can add creaminess, acidity, sweetness, and spice all at once \u2014 whether spread on toast, tucked into a sandwich, or served alongside roasted vegetables.<\/p>\n

Of the three launch flavors, Lasenby initially thought Apricot Ginger Curry might be the hardest sell. It\u2019s fruity and savory, familiar yet unexpected.<\/p>\n

Instead, it became a favorite. \u201cIt consistently surprised people in the best possible way,\u201d she says.<\/p>\n

That response reflects a broader shift in how dairy is evolving. Yogurt and condiments have already embraced global flavors, and cream cheese is beginning to follow. It occupies a unique space \u2014 part cheese, part spread, part condiment \u2014 making it especially adaptable.<\/p>\n

For Lasenby, the goal isn\u2019t to reinvent cream cheese entirely, but to expand what it can be. The old flavored versions were about convenience. The new generation keeps that ease while adding curiosity and creativity. It can still elevate a bagel \u2014 but it might also lead to something unexpected.
