For private tastings, I&#8217;ve served a creamy blue like <a href=\"https:\/\/www.buonaitalia.us\/product\/sweet-gorgonzola-pdo\/\" target=\"_blank\">Gorgonzola Dolce <\/a>dolloped onto a <a href=\"https:\/\/www.ghirardelli.com\/chocolate\/all-chocolate\/squares?srsltid=AfmBOoq7DCPogdtGZMpcVSIW4spCxQfyT_s8yqoHnLgyZ40AgpLQnRC3\" target=\"_blank\">Ghirardelli chocolate square<\/a>. The square functions as a cracker, so guests can pick it up and eat it in one bite. With the number of blue cheeses out there and the number of square chocolates, you could really have fun with this. For the recipe, she makes a typical shortbread base, adds honey and Saint Agur on top, and adds a top layer of shortbread with a &#8220;window&#8221; cut out, so the shortbread effectively frames the swirls and spots of the blue cheese. But you can just spread it on a cookie if you prefer.
