You would be tempted to believe that Marcel Petite is the \u201cproducer\u201d of the cheese, that is, the cheesemaker who made the wheel, perhaps on a dairy also owned by Marcel Petite. For French PDO cheeses such as <a href=\"https:\/\/comte-usa.com\/\">Comt\u00e9<\/a>, however, and many others throughout Europe, the label typically refers to the cheese\u2019s final producer: <strong>the affineur<\/strong>.<\/p>\n<p>\u00a0<\/p>\n<h2>Affinage, Explained<\/h2>\n<p class=\"\"><a href=\"https:\/\/www.cheeseprofessor.com\/blog\/affinage-101-aging-cheese\" target=\"_blank\">Affinage<\/a>, or \u201crefinement,\u201d refers to the stage in which cheeses are <strong>ripened and aged<\/strong> \u2014 the stage in cheesemaking where cheeses develop personality. With no disrespect intended to our favorite fresh cheeses, which can also beautifully express matters of milk quality and <a href=\"https:\/\/www.cheeseprofessor.com\/blog\/best-cheeses-seasons\" target=\"_blank\">seasonality<\/a>, the act of aging cheese is where things start to get really interesting.<\/p>\n<p class=\"\">The many variables of affinage are what give us the sheer number of unique cheeses available worldwide. Photo credit Pamela Vachon<\/p>\n<\/figcaption><\/figure>\n<p class=\"\">Traditionally, much of Europe has operated under a three-part cheese system that separates Protected Designation of Origin (PDO) cheese production into three separate entities: the <strong>dairy<\/strong> or collective of dairies supplying the milk, the <strong>cheesemaker<\/strong>, and the <strong>affineur<\/strong>. Given hundreds, if not thousands of years of cheese history across the continent, this is the system that proliferated to maximize quality, control, and scalability.<\/p>\n<p class=\"\">The American artisan cheese industry, on the other hand, is still in its relative infancy, and affinage in the U.S. has largely been handled by individual cheese producers, which in many cases are farmstead operators who are also responsible for their herd of milk-producing animals.<\/p>\n<p class=\"\">Along with the growth of the American cheese industry, however, American affinage has also been on a journey over the past few decades. While many American creameries continue to do the affinage for their own cheeses, affinage in the U.S. is still ripening, with myriad players experimenting with various models to continue to build and refine the process. Photo credit Jasper Hill<\/p>\n<\/figcaption><\/figure>\n<p class=\"\">The evolution of Greensboro, Vt.\u2013based <a href=\"https:\/\/www.jasperhillfarm.com\/?srsltid=AfmBOooISJQ1Yi1yJC_k46N9ryc6SJHkfM74ooE5ae_lCe5dgYytE-n9\" target=\"_blank\">Jasper Hill,<\/a> well known for its award-winning cheeses, offers a lens into the challenges of consolidated affinage in a still-developing American cheese industry.<\/p>\n<p class=\"\">In addition to producing milk and making cheese, the company also operates <a href=\"https:\/\/www.jasperhillfarm.com\/the-cellars?srsltid=AfmBOoqWZh4WGsCuQd26kmpVYXhd016G8tb7Ff2Q93ewe2HyY9EZ9PEP\" target=\"_blank\">The Cellars at Jasper Hill<\/a>, which includes running a herd-management operation, two cheesemaking facilities, and a cave-aging cellar.\u00a0<\/p>\n<p class=\"\">The Cellars was originally designed as a regional aging facility serving farms across Vermont\u2019s <a href=\"https:\/\/www.northeastkingdom.com\/\" target=\"_blank\">Northeast Kingdom.<\/a><\/p>\n<p class=\"\">\u201cWe started out with a European model in mind,\u201d says Zoe Brickley, Jasper Hill\u2019s Director of Communications. \u201cWe&#8217;re in the middle of nowhere. That&#8217;s where the farms are. That&#8217;s where the cheese is made. [The idea was that] this is going to be a piece of infrastructure to help people gain access to the value-added market.\u201d<\/p>\n<p class=\"\">But costs on both sides of the operation were a challenge, narrowing profit margins for both the creameries outsourcing affinage and Jasper Hill itself, which stood to gain more from using its own shelf space to grow inventory.<\/p>\n<p class=\"\">Food safety considerations also played a role in Jasper Hill moving away from providing affinage services for others, says Brickley, who notes that in terms of food safety conditions in a shared space, \u201cyou&#8217;re only as on top of it as your weakest producer.\u201d<\/p>\n<p class=\"\">\u201cThere&#8217;s a liability, especially with the advent of the <a href=\"https:\/\/www.fda.gov\/food\/guidance-regulation-food-and-dietary-supplements\/food-safety-modernization-act-fsma\" target=\"_blank\">Food Safety Modernization Act<\/a>, which makes [those relationships] quite complicated,\u201d she says. \u201cYou need to be really up in people&#8217;s business, which is achievable, but difficult.\u201d<\/p>\n<p class=\"\">Today, The Cellars at Jasper Hill houses mostly its own label of cheeses plus <a href=\"https:\/\/cabotcreamery.com\/blogs\/news\/cabot-clothbound-cheddar?srsltid=AfmBOop_Dsy9WiCarHyOC3RWmXLEVXonTIiRDoe4nreO95-Dl3jmDQrB\" target=\"_blank\">Cabot Clothbound Cheddar<\/a>, with a small bit of shelf space reserved for cheddar from <a href=\"https:\/\/store.shelburnefarms.org\/category\/cheddar?srsltid=AfmBOorqJ4zMEbAy1pORFrs3WAu2PHhj2pHB7Mks8jbBANQBnQdIuFYh\" target=\"_blank\">Shelburne Farms<\/a>. (A few other operations also offer affinage as a favor to their neighbors, like <a href=\"https:\/\/www.miltoncreamery.com\/\" target=\"_blank\">Milton Creamery<\/a> formerly did for <a href=\"https:\/\/www.cheeseprofessor.com\/blog\/florys-truckle\" target=\"_blank\">Flory\u2019s Truckle.<\/a>) The Cellars at Jasper Hill Farm was instrumental, however, in the middle stages of Vermont\u2019s exceptional artisan cheese industry growth, giving rise to a few cheeses beyond the Jasper Hill label, and buying time for some creameries to establish their own affinage facilities. At the Wegmans cheese facility, however, cheeses in the same stage of maturation are all completely cleared and packaged before a new batch of cheese comes in.<\/p>\n<p class=\"\">\u201cIt&#8217;s one of the most wild cave situations I&#8217;ve ever seen,\u201d Jasper Hill\u2019s Brickley says of the Wegmans facility. \u201cIt&#8217;s extremely risk-averse, as is the entire Wegmans operation. Like, I would eat Wegmans sushi off the floor.\u201d<\/p>\n<p class=\"\">That risk aversion and focus on soft cheeses doesn\u2019t mean there isn\u2019t room for creativity. Wegmans has partnered with<a href=\"https:\/\/www.vermontcreamery.com\/\" target=\"_blank\"> Vermont Creamery<\/a> to create flavored goat cheeses that go beyond typical inclusions, with varieties featuring ingredients such as orange peel and Thai-inspired seasonings. The retailer has also sourced wheels from a French creamery for its award-winning washed-rind <a href=\"https:\/\/www.wegmans.com\/shop\/search?query=sake%202%20me\" target=\"_blank\">Sake 2 Me,<\/a> which is rinsed in sake.<\/p>\n<p class=\"\">Wegmans also recently released a blue cheese in partnership with <a href=\"https:\/\/roguecreamery.com\/\" target=\"_blank\">Rogue Creamery.<\/a> \u201cOur chairman, Danny Wegmans, loves blue cheese,\u201d says Callol. \u201cHe loved the<a href=\"https:\/\/roguecreamery.com\/products\/rogue-river-blue-cheese?srsltid=AfmBOopExs4JkgLJPK4iykidgygepzEkshB8eSInTEjMVjWlohzJfKDx\" target=\"_blank\"> Rogue River Blue,<\/a> and there are a lot of trends around sake and yuzu, so we wondered: Can we do something with all of that?\u201d The result is <a href=\"https:\/\/www.instagram.com\/p\/DUlaKONDQtZ\/\" target=\"_blank\">Bluzu<\/a>, a sake-soaked blue decked with yuzu peels.<\/p>\n<p class=\"\">With a background mainly in European PDO cheeses, Callol is inspired by what American cheesemakers are able to do with their own affinage. \u201cI&#8217;m impressed with all those cheesemakers, because they are not afraid of innovation,\u201d he says. \u201cFrance is very traditional, and I&#8217;ve learned to be more open-minded and try new things, because there is no barrier. Initially, the focus was on using established aging traditions to improve the quality of the cheeses Murray\u2019s handled, explains Josh Windsor, Murray\u2019s Associate Director of Caves. This included the Loire Valley-style ash-ripened goat cheeses that are still part of the Murray\u2019s cave-aged inventory today.<\/p>\n<p class=\"\">Over time, however, collaboration and experimentation became a defining part of Murray\u2019s model. Two cheeses illustrate that shift. <a href=\"https:\/\/www.murrayscheese.com\/dp\/murray-s-cave-aged-reserve-hudson-flower\" target=\"_blank\">Hudson Flower <\/a>emerged as a solution to the unavailability of <a href=\"https:\/\/www.cheese.com\/fleur-du-maquis\/\" target=\"_blank\">Fleur de Maquis (Brin d\u2019Amour)<\/a>, with local hops standing in for the wild Mediterranean herbs traditionally used to coat the cheese. (\u201cNo one wants wild foraged herbs from New York City,\u201d Windsor says.) They include <a href=\"https:\/\/www.murrayscheese.com\/dp\/murray-s-cave-aged-original-stockinghall-cheddar\" target=\"_blank\">Stockinghall<\/a>, a highly awarded American cheddar that was developed in a year-long process between Murray\u2019s and Cornell University, using base wheels from <a href=\"https:\/\/www.oldchathamcreamery.com\/\" target=\"_blank\">Old Chatham Creamery,<\/a> washed-rind <a href=\"https:\/\/www.murrayscheese.com\/dp\/murray-s-cave-aged-reserve-cornelia\" target=\"_blank\">Cornelia<\/a> (which begins as <a href=\"https:\/\/pointreyescheese.com\/products\/toma?srsltid=AfmBOoq2ua8F6r3iIUfn3fSCb0hSaPhdrqrQ-h895MwJ-ZHtew1FOxSJ\" target=\"_blank\">Point Reyes Toma<\/a>) and <a href=\"https:\/\/www.murrayscheese.com\/dp\/murray-s-cave-aged-reserve-annelies\" target=\"_blank\">Annelies<\/a>, an American extension of Walter Raas\u2019s beloved <a href=\"https:\/\/www.chaellerhocker.ch\/\" target=\"_blank\">Ch\u00e4llerhocker<\/a>. Photo credit Beehive Cheese<\/p>\n<\/figcaption><\/figure>\n<p class=\"\">Utah-based <a href=\"https:\/\/beehivecheese.com\/\" target=\"_blank\">Beehive Cheese<\/a> produces cheddars with distinctive finishes, including the bourbon-soaked <a href=\"https:\/\/beehivecheese.com\/products\/pour-me-a-slice\" target=\"_blank\">Pour Me a Slice<\/a>, coffee-rubbed <a href=\"https:\/\/beehivecheese.com\/products\/barely-buzzed\" target=\"_blank\">Barely Buzzed,<\/a> and sea salt- and honey-treated <a href=\"https:\/\/beehivecheese.com\/products\/seahive\" target=\"_blank\">Seahive<\/a>, along with versions flavored with porcini, chives, and Hatch green chiles. The brand began in 2005 as a family-run operation that handled both the handcrafted cheesemaking and the affinage, partnering with family-run <a href=\"https:\/\/gossner.com\/\" target=\"_blank\">Gossner Foods<\/a> for its dairy supply.<\/p>\n<p class=\"\">While Beehive\u2019s founders began as cheesemakers in earnest, it was its affinage that helped define the brand. \u201cExperimenting on new, crazy flavors is where a lot of the personality of our cheeses show up,\u201d says Britton Welsh, President of Beehive Cheese.<\/p>\n<p class=\"\">In late 2023, Beehive Cheese shifted to a more European model, focusing solely on affinage for its line of flavored cheeses. Dairy partner Gossner Foods now produces the base wheels of <a href=\"https:\/\/beehivecheese.com\/products\/promontory\" target=\"_blank\">Promontory Cheddar<\/a>, a move that has expanded the company\u2019s growth potential.<\/p>\n<p class=\"\">\u201cFocusing on affinage has helped us get back to what we do best,\u201d says Welsh, noting that with an ideal cheesemaking partner, the company can now focus its energy on the part of the process where ideas and experience make the biggest difference.<\/p>\n<p class=\"\">\u201cNarrowing our focus has opened the door to more creativity,\u201d he adds. \u201cThat focus has led to better consistency, better cheese, and a clearer sense of who we are. It\u2019s also given us the opportunity to use the limited resources of our family company to bring our cheeses to more fans.\u201d<\/p>\n<p class=\"\">Like Murray\u2019s, the freedom to experiment also creates opportunities for experiments to become limited-run products.<\/p>\n<p class=\"\">\u201cWe can play with flavoring and even new cheese styles in a hands-on way,\u201d says Welsh. \u201cSome of those experiments turn into small-batch or seasonal cheeses, and others quietly improve the core cheeses we\u2019ve been making for years.
