Oru\u00e7 tutulan Ramazan ay\u0131nda bu, daha da \u00f6nemli hale gelir. <\/strong><\/p>\n<p>Geleneksel olarak su, susuzlu\u011fu gidermenin en iyi yolu olarak kabul edilir. Ancak son y\u0131llarda yap\u0131lan bilimsel \u00e7al\u0131\u015fmalar, i\u00e7eceklerin yaln\u0131zca su i\u00e7eri\u011finin de\u011fil ayn\u0131 zamanda besin ve elektrolit bile\u015fimlerinin de hidrasyon \u00fczerinde belirleyici oldu\u011funu, baz\u0131 besin de\u011feri y\u00fcksek i\u00e7eceklerin bu konuda en az su kadar, hatta baz\u0131 durumlarda sudan daha etkili olabildi\u011fini ortaya koymaktad\u0131r.<\/p>\n<p>Son 10 y\u0131lda yap\u0131lan ve American Journal of Clinical Nutrition, Nutrients ve Journal of Renal Nutrition and Metabolism dergilerinde yay\u0131nlanan 4 ayr\u0131 klinik ara\u015ft\u0131rma, i\u00e7eceklerin v\u00fccutta s\u0131v\u0131 tutulumu \u00fczerindeki etkilerini incelemi\u015f ve \u201c\u0130\u00e7ecek Hidrasyon \u0130ndeksi\u201d (Beverage Hydration Index \u2013 BHI) kavram\u0131 ortaya at\u0131lm\u0131\u015ft\u0131r. Bu \u00e7al\u0131\u015fmalar s\u00fct gibi protein, karbonhidrat ve elektrolit i\u00e7eren i\u00e7eceklerin v\u00fccutta s\u0131v\u0131n\u0131n daha uzun s\u00fcre tutulmas\u0131na katk\u0131 sa\u011flayabildi\u011fini g\u00f6stermektedir. S\u00f6z konusu besin bile\u015fenlerini i\u00e7eren ayran ve kefir gibi fermente s\u00fct \u00fcr\u00fcnleri de susuzlu\u011fu giderme a\u00e7\u0131s\u0131ndan son derecede faydal\u0131 \u00fcr\u00fcnler olarak kar\u015f\u0131m\u0131za \u00e7\u0131kmaktad\u0131r.<\/p>\n<h3><strong>\u201cS\u00fct ve fermente s\u00fct \u00fcr\u00fcnleri s\u0131v\u0131 kayb\u0131ndan koruyor\u201d<\/strong><\/h3>\n<p>S\u00fct ve s\u00fct \u00fcr\u00fcnlerinin v\u00fccuttaki su dengesi \u00fczerindeki etkisine dikkat \u00e7eken Orta Do\u011fu Teknik \u00dcniversitesi G\u0131da M\u00fchendisli\u011fi B\u00f6l\u00fcm\u00fc\u2019nden Prof. Dr. Hami Alpas, \u201cS\u00fct\u00fcn i\u00e7erdi\u011fi protein, laktoz ve elektrolit gibi besin bile\u015fenleri, mide bo\u015falmas\u0131n\u0131 yava\u015flat\u0131yor ve s\u0131v\u0131 kayb\u0131n\u0131 azalt\u0131yor. Bu sayede s\u0131v\u0131n\u0131n daha uzun s\u00fcre v\u00fccutta tutulmas\u0131na katk\u0131 sa\u011fl\u0131yor. S\u00fct, susuzlu\u011fu giderme konusunda baz\u0131 bilimsel ara\u015ft\u0131rmalara g\u00f6re en az su kadar, baz\u0131 ara\u015ft\u0131rmalara g\u00f6re ise sudan daha etkili olabiliyor\u201d dedi.<\/p>\n<p>Prof. Dr. Alpas, ayran ve kefir gibi s\u00fct bazl\u0131 fermente i\u00e7eceklerin de s\u0131v\u0131 i\u00e7eri\u011fi ve s\u00fcte benzer besin bile\u015fimi sayesinde susuzlu\u011fu gidermede etkili \u00fcr\u00fcnler oldu\u011funu, bu i\u00e7eceklerin probiyotik olmas\u0131 itibariyle sindirim sa\u011fl\u0131\u011f\u0131 ve genel sa\u011fl\u0131k i\u00e7in de \u00e7ok yararl\u0131 oldu\u011funu s\u00f6yledi.<\/p>\n<p>\u00d6zellikle Ramazan ay\u0131nda g\u0131da g\u00fcvenli\u011fine dikkat edilmesi gerekti\u011fine de vurgu yapan Alpas, t\u00fcketicilerin g\u00fcvenilir noktalarda sat\u0131lan ambalajl\u0131 s\u00fct ve s\u00fct \u00fcr\u00fcnlerini tercih etmesi gerekti\u011fini s\u00f6yledi. Alpas, \u201cDenetim mekanizmas\u0131n\u0131n tamamen d\u0131\u015f\u0131nda kalan sokak s\u00fct\u00fc gibi \u00fcr\u00fcnler, t\u00fcketici sa\u011fl\u0131\u011f\u0131 a\u00e7\u0131s\u0131ndan risk te\u015fkil etmektedir. \u00d6te yandan ambalajl\u0131 \u00fcr\u00fcnler, \u00e7iftlikten t\u00fcketiciye ula\u015fana kadar her a\u015famada denetlenmekte, g\u0131da standartlar\u0131na uygun \u015fekilde i\u015flenmekte ve muhafaza edilmektedir. Bu nedenle, t\u00fcketicilerin tercihlerini ambalajl\u0131 \u00fcr\u00fcnlerden yana kullanmas\u0131n\u0131 \u00f6neriyoruz\u201d dedi.<\/p>\n<h3><strong>\u201cRamazan ay\u0131nda da her ya\u015ftan t\u00fcketicinin sofras\u0131nda bulunmal\u0131\u201d<\/strong><\/h3>\n<p>Konuya ili\u015fkin bir de\u011ferlendirme yapan \u0130stinye \u00dcniversitesi Beslenme ve Diyetetik B\u00f6l\u00fcm\u00fc Ba\u015fkan\u0131 Prof. Dr. Funda Elmac\u0131o\u011flu, ayran ve kefirin terleme ile kaybedilen su ve minerallerin yerine konmas\u0131na katk\u0131 sa\u011flayan \u00f6nemli i\u00e7ecekler oldu\u011funu belirtti. Elmac\u0131o\u011flu, ayran\u0131n ki\u015finin ihtiyac\u0131 olan vitamin, mineral, protein ve di\u011fer besin \u00f6\u011felerinin v\u00fccuda dengeli \u015fekilde al\u0131nmas\u0131na olanak sa\u011flad\u0131\u011f\u0131n\u0131 ifade etti.<\/p>\n<p>Oru\u00e7 tutulan Ramazan ay\u0131nda, sahur ve iftar aras\u0131nda ge\u00e7en s\u00fcrede v\u00fccudun s\u0131v\u0131 dengesinin korunmas\u0131n\u0131n b\u00fcy\u00fck \u00f6nem ta\u015f\u0131d\u0131\u011f\u0131n\u0131 belirten Elmac\u0131o\u011flu, bu ba\u011flamda s\u00fct, ayran ve kefir gibi i\u00e7eceklerin ve yo\u011furt kullan\u0131lan yemek, \u00e7orba, cac\u0131k gibi geleneksel \u00fcr\u00fcnlerin v\u00fccudun s\u0131v\u0131 al\u0131m\u0131n\u0131 destekledi\u011fini, i\u00e7erdi\u011fi protein ve elektrolitler sayesinde s\u0131v\u0131n\u0131n v\u00fccutta daha uzun s\u00fcre tutulmas\u0131na, dolay\u0131s\u0131yla hidrasyonun korunmas\u0131na yard\u0131mc\u0131 oldu\u011funu s\u00f6yledi.<\/p>\n<p>Eri\u015fkin t\u00fcketicilerin s\u00fct \u00fcr\u00fcnlerinden uzak durmas\u0131 gerekti\u011fi y\u00f6n\u00fcnde son d\u00f6nemde bas\u0131na yans\u0131yan s\u00f6ylemleri de ele\u015ftiren Prof. Dr. Elmac\u0131o\u011flu, bu gibi a\u00e7\u0131klamalar\u0131n bilimsel ara\u015ft\u0131rma sonu\u00e7lar\u0131yla \u00e7eli\u015fti\u011fini, s\u00f6z konusu s\u00fct \u00fcr\u00fcnlerinin her ya\u015ftan t\u00fcketicinin beslenmesinde yer almas\u0131 ve Ramazan ay\u0131nda mutlaka sofralarda bulunmas\u0131 gerekti\u011fini vurgulad\u0131.<\/p>\n<h3><strong>Ayran ve kefir t\u00fcketimi istikrarl\u0131 bi\u00e7imde art\u0131yor<\/strong><\/h3>\n<p>T\u00fcrkiye\u2019de ayran, hem geleneksel t\u00fcketim al\u0131\u015fkanl\u0131klar\u0131n\u0131n hem de sanayi \u00fcretiminin \u00f6nemli \u00fcr\u00fcnlerinden biri olmay\u0131 s\u00fcrd\u00fcr\u00fcyor.<\/p>\n<p><strong>Ambalajl\u0131 S\u00fct ve S\u00fct \u00dcr\u00fcnleri Sanayicileri Derne\u011fi\u2019nin (AS\u00dcD)<\/strong> verilerine g\u00f6re, son y\u0131llara ili\u015fkin \u00fcretim verileri incelendi\u011finde, ayran ve kefirin istikrarl\u0131 bir b\u00fcy\u00fcme e\u011filimi g\u00f6stermesi dikkat \u00e7ekmektedir. 2023\u2019te 830 bin tona y\u00fckselen ayran ve kefir \u00fcretimi 2024 y\u0131l\u0131nda bir \u00f6nceki y\u0131la g\u00f6re yakla\u015f\u0131k %16 art\u0131\u015fla 960 bin tona ula\u015farak \u00f6nemli bir b\u00fcy\u00fcme kaydetmi\u015ftir. 2025 y\u0131l\u0131nda ise ayran ve kefir \u00fcretimi %9\u2019un \u00fczerinde artarak 1 milyon 50 bin ton olarak ger\u00e7ekle\u015fmi\u015ftir. Bu veriler, ayran ve kefir \u00fcretiminin son d\u00f6nemde s\u00fcrekli art\u0131\u015f e\u011filiminde oldu\u011funu ve sekt\u00f6r\u00fcn b\u00fcy\u00fcmeye devam etti\u011fini g\u00f6stermektedir.<\/p>\n<p>\u00dcretimdeki d\u00fczenli b\u00fcy\u00fcme; fermente s\u00fct \u00fcr\u00fcnlerinin i\u00e7 pazarda g\u00fc\u00e7l\u00fc talep g\u00f6rmesi ve s\u00fct sanayisinde katma de\u011ferli \u00fcr\u00fcnlere y\u00f6nelimin artmas\u0131yla ili\u015fkilendirilmektedir.
