Raz Shabtai, chef at <a href=\"https:\/\/koshermiami.org\/establishments\/Mutra\" target=\"_blank\">Mutra<\/a> restaurant in North Miami, Florida, calls labneh yogurt\u2019s more sophisticated older sibling.\u00a0<\/p>\n<p class=\"\">\u201cYogurt is fermented milk strained once. Labneh is strained twice. That additional process gives labneh a thicker texture, and it generally has more acidity and a stronger flavor,\u201d he says. He likens the two to tahini and hummus. \u201cYou can have tahini without hummus, but you cannot have hummus without tahini,\u201d says the chef.\u00a0<\/p>\n<p class=\"\">For Shabtai, that denser texture and complexity in flavors make labneh the core of Mediterranean cuisine when it comes to dairy. The chef likes to roll sheep\u2019s labneh into small balls and preserve in a bath of olive oil and spices. According to <a href=\"https:\/\/www.linkedin.com\/in\/diane-han-mph-rdn-ld-3351911a5\/\" target=\"_blank\">Diane Han, MPH, RD<\/a>, a weight management dietitian in San Francisco, since labneh is thicker, you don\u2019t have to eat as much as yogurt to get your share of probiotics and protein. \u201cA serving of Greek yogurt is a cup, while a serving of labneh is two tablespoons. You need to eat a lot less to get a bit more protein,\u201d she says.\u00a0<\/p>\n<p class=\"\">Han also notes to be mindful of the sodium content of labneh. You have to control it and strain it. I remember my dad used to make labneh in Jerusalem. It\u2019s so much work. It\u2019s a process. When you invest in something, there\u2019s a beautiful outcome. Recipes from producers include dips, frostings and as a topping for berries or potatoes.\u00a0<\/p>\n<p class=\"\">If you haven\u2019t tried labneh yet, Shabtai has a challenge for you. \u201cCut a cucumber. Make sure the cucumber is very cold. Dip it into some labneh drizzled with olive oil and chopped cilantro.
