Unlike <a href=\"https:\/\/www.cheeseprofessor.com\/blog\/shavuot-dairy-blintzes\" target=\"_blank\" rel=\"noopener\">Shavuot<\/a>, it isn\u2019t a traditionally dairy-focused holiday, but there are plenty of ways to include cheese in your Rosh Hashanah celebration.<\/p>\n<p class=\"\">\u201cIt&#8217;s more a honey and fruits holiday, but cheese is a good pairing for that,\u201d says Noemie Richard Stein, maitre fromager consultant at <a href=\"https:\/\/gvinage.co.il\/en\/\" target=\"_blank\" rel=\"noopener\">Gvinage<\/a>, an Israeli company that offers cheese education and experiences. Traditionally, Rosh Hashanah dinners include meat, which cannot be eaten with dairy products under kosher dietary laws. In addition, if you or your guests are kosher-observant, you\u2019ll be serving <a href=\"https:\/\/www.cheeseprofessor.com\/blog\/what-is-kosher-cheese\" target=\"_blank\" rel=\"noopener\">kosher cheeses<\/a>.<\/p>\n<p class=\"\">Eating apples dipped in honey on Rosh Hashanah is a popular Ashkenazi Jewish tradition, symbolizing the hopes for a sweet new year. \u201cBlue cheese has this very savory complexity that can be a nice match with apple and honey,\u201d says Stein. <\/p>\n<p class=\"\">Delman recommends a traditional pairing of sharp cheddar with apples, especially if you\u2019re serving an apple pie for dessert. When it comes to honey, consider the honey\u2019s specific flavor notes\u2014he suggests pairing nuttier, more intensely-flavored honeys with aged, hard cheeses like sharp Cheddar, manchego, and parmesan. One option is Beehive Cheese Company\u2019s Seahive, a Cheddar-style cheese rubbed with honey and sea salt.\u00a0<\/p>\n<p class=\"\">Another cheese made with honey is Perisa Fior di Tiglio, an Italian raw cow\u2019s milk cheese. \u201cIt\u2019s aged as it hangs, so it creates this divet in the top of the cheese as it weighs itself down,\u201d Wynn says. \u201cThen they pour honey into the top of the cheese.
