If you&#8217;re looking to branch out take a closer look at Spanish cheeses, even if you&#8217;re not cooking Spanish food. Schuster shares that the appeal is in trying something new, something your guests haven\u2019t had before. If you&#8217;re not sure where to start, Schuster suggests Mahon, &#8220;A lot of Spanish cheeses have paprika or olive oil on the rind, they are the original cave aged cheeses,&#8221; he explains adding, &#8220;Mahon is a super traditional cheese. It has flavor not only from the cheese, but the rind. The breeds used to make it are different too, and it is easy to love. A young Mahon melts really well for sandwiches or empanada and in a bechamel.&#8221; Now that&#8217;s a versatile cheese.\u00a0<\/p>\n<p>\u00a0<\/p>\n<h2>Spanish Cheeses for\u00a0 Cooking &amp; Entertaining<\/h2>\n<p class=\"\">When asked to pick a few more go to cheeses, Schuster shares, &#8220;I really like the <a href=\"https:\/\/forevercheese.com\/product\/miticana-de-cabra\/\" target=\"_blank\" rel=\"noopener\">Cana de Cabra<\/a> and <a href=\"https:\/\/forevercheese.com\/product\/miticana-de-oveja\/\" target=\"_blank\" rel=\"noopener\">Cana de Oveja<\/a> (both similar to the French cheese Bucheron). Manchego is a cheese everyone knows but another similar one, <a href=\"https:\/\/www.foodswinesfromspain.com\/en\/food\/products\/cheese\/queso-tetilla-pdo\" target=\"_blank\" rel=\"noopener\">Tetilla PDO<\/a>, is not as well known. Manchego and tetilla are kind of like cousins. Tetilla, Spanish for teat, refers to the shape. <a href=\"https:\/\/www.foodswinesfromspain.com\/en\/food\/products\/cheese\/arzua-ulloa-pdo\" target=\"_blank\" rel=\"noopener\">Arz\u00faa-Ulloa PDO<\/a> is a flat disk, both are really soft and young, and the rinds are like the consistency of fondant, they are cow\u2019s milk but tangy and yogurt-y and melt really well.&#8221; <em>Read more about <\/em><a href=\"https:\/\/www.cheeseprofessor.com\/blog\/geographical-indication-labels-cheese\" target=\"_blank\" rel=\"noopener\"><em>PDO and other geographical indication cheeses<\/em><\/a>.<\/p>\n<p>\u00a0<\/p>\n<h2>Cheese Swaps<\/h2>\n<p class=\"\">One easy way to change things up is by swapping a more well-known cheese for a lesser-known Spanish cheese. In place of Parmigiano Reggiano, Schuster suggests <a href=\"https:\/\/www.quesocastellano.es\/en\/taste\/\" target=\"_blank\" rel=\"noopener\">Castellano<\/a>, a hard pasteurized sheep&#8217;s milk cheese. For Brie or Camembert, he suggests, <a href=\"https:\/\/tortadelcasar.eu\/\" target=\"_blank\" rel=\"noopener\">Torta del Casar PDO<\/a> a creamy raw sheep&#8217;s milk cheese, especially if you like a soft, stinky cheese.\u00a0<\/p>\n<p class=\"\">To add some peppery zip, Schuster suggests paprika cheeses such as <a href=\"https:\/\/www.foodswinesfromspain.com\/en\/food\/products\/cheese\/mahon-menorca-pdo\" target=\"_blank\" rel=\"noopener\">Mahon<\/a> or Alisios from the Canary Islands, which share the same sharpness or smokiness of Gouda or Cheddar. <em>Read more <\/em><a href=\"https:\/\/www.cheeseprofessor.com\/blog\/4-great-canary-islands-cheeses\" target=\"_blank\" rel=\"noopener\"><em>about Canary Island cheeses<\/em><\/a><em>.<\/em><\/p>\n<p>\u00a0<\/p>\n<h2>Dishes<\/h2>\n<p class=\"\">We asked Schuster for some easy ways to change up classic recipes using Spanish cheeses.
