The store aims to make a large statement in a small space \u2013 one that was designed with an eye toward not only cheese, but community.<\/p>\n<p class=\"\">Galen has harbored a love for cheese since she was a child. \u201cI grew up near <strong>Wasik\u2019s Cheese Shop<\/strong> (Wellesley, MA) and I was overwhelmed with delight when I would go there.\u201d But her path to opening her own shop was not a straight line. Galen worked in the non-profit sector upon graduating from college and then entered the graduate program in Food Studies at NYU. Along the way she had experiences that solidified her love of cheese. Working at <strong>Caseus Cheese Shop<\/strong>, New Haven, CT, \u201cwas the first time I was exposed to the American artisan cheese world.\u201d She said it was there that she realized that \u201ccheese is the remaining frontier where you can have a shared culinary experience with the person behind the counter \u2013 it provides that spark of intimacy you don\u2019t get anywhere else.\u201d Galen says the time there was a \u201cbig unlock for her \u2013 I love helping customers take a moment to open up their minds to think about the people behind the cheese they\u2019re eating.\u201d<\/p>\n<p class=\"\">The second experience occurred while Galen volunteered at <a href=\"https:\/\/www.catocornerfarm.com\/\" target=\"_blank\" rel=\"noopener\">Cato Corner Farm<\/a>, Colchester, CT. And working retail at Lucy\u2019s Whey offered a continuation of those conversations she had at Caseus. \u201cI cherished those shared experiences with customers that are so important.\u201d Conversations at Lucy Whey\u2019s also led her to explore, for her final project at NYU, the topic of cheese consumption recommendations during pregnancy. Her thesis, which became an article for the Graduate Association for Food Studies, was \u201cCheesemongers over Fearmongers: Toward Data Driven Cheese Recommendations for Pregnant Women.\u201d<\/p>\n<p class=\"\">Upon graduation, Galen worked at <a href=\"https:\/\/www.nyshuk.com\/\" target=\"_blank\" rel=\"noopener\">New York Shuk<\/a>, a Brooklyn-based maker of handcrafted Middle Eastern pantry staples, did some writing for <a href=\"https:\/\/www.amazon.com\/Oxford-Companion-Cheese-Companions\/dp\/0199330883\" target=\"_blank\" rel=\"noopener\">The Oxford Companion to Cheese<\/a>, and enjoyed motherhood. Her path then took her to Westchester County, NY, and <a href=\"https:\/\/stonebarnscenter.org\/\" target=\"_blank\" rel=\"noopener\">Stone Barns Center for Food and Agriculture<\/a>. \u201cWorking there tied everything together \u2013 the ability to connect people with the farmers who provide their food, the social mission of a non-profit, and issues of advocacy.\u201d Galen noted that it\u2019s important for society at large to be interested in these issues.<\/p>\n<p class=\"\">In 2021 Galen says, \u201cI caught the bug to go back out on my own.\u201d She had moved to Dobbs Ferry and, now with two children, saw, \u201cAs I got more involved in the community I knew that my calling had to be part of building a future for my kids \u2013 that\u2019s how Bloomy was born.\u201d Its first incarnation was as part of HudCo, a co-working space. \u201cIt was wonderful to be part of HudCo for a lot of reasons \u2013 there was always something going on there, I was able to collaborate with other women, and at that point during the pandemic people were looking for creative ways to entertain and gather with friends again.\u201d<\/p>\n<h2><strong>The Shop <\/strong><\/h2>\n<p class=\"\">From her stint at HudCo, Galen realized, \u201cthe co-working idea can be applied to retail as well.\u201d The store serves as a platform to collaborate with her neighbors \u2013 so there have been cheese and beer pairings with a local brewery\/coffeeshop, an oyster collaboration, and a take on an apres-ski Raclette evening. The functionality of the 575 sq. ft. store (moving shelves, tables and staircase) with a kitchen in the rear, lend themselves to these get-togethers.\u00a0\u00a0<\/p>\n<figure class=\"sqs-block-image-figure              intrinsic\"><\/p>\n<p>                  <img decoding=\"async\" class=\"thumb-image\" data-image=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5eb43938f468c330e7d8d665\/9d13f7f1-2e7c-49fe-92d9-5b0bfa2bc202\/Store+Bloomy+Cheese+%26+Provisions.jpg\" data-image-dimensions=\"1440x1800\" data-image-focal-point=\"0.5,0.5\" alt=\"Bloomy Cheese &amp; Provisions store shelves\" data-load=\"false\" data-image-id=\"644c465f0cfca52de4bf62f9\" data-type=\"image\" src=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5eb43938f468c330e7d8d665\/9d13f7f1-2e7c-49fe-92d9-5b0bfa2bc202\/Store Bloomy Cheese &#038; Provisions.jpg?format=1000w\"><figcaption class=\"image-caption-wrapper\">\n<p class=\"\">Store courtesy of Bloomy Cheese &amp; Provisions<\/p>\n<\/figcaption><\/figure>\n<p class=\"\">\u201cI learned a number of things during the pandemic that solidified my plans for what type of shop I wanted to open.\u201d Galen decided she wanted a space that put cheese front and center, while offering \u201call the specialty groceries and home items that people need.\u201d Bloomy Dobbs\u2019 motto is \u201cLactose &amp; Tolerance,\u201d and Galen says she\u2019s sourcing very deliberately from women-owned, BIPOC-owned, and LGBTQ-owned companies. \u201cI\u2019m looking for quality foods, items with really intense or spicy flavors, and brands that complement cheese.\u201d At Bloomy Dobbs, customers will find cheeses from women-owned <a href=\"https:\/\/www.lazyladyfarm.com\/\" target=\"_blank\" rel=\"noopener\">Lazy Lady Farm<\/a> and <a href=\"https:\/\/www.capriolegoatcheese.com\/\" target=\"_blank\" rel=\"noopener\">Capriole<\/a>, spices from <a href=\"https:\/\/www.diasporaco.com\/\" target=\"_blank\" rel=\"noopener\">Diaspora Co<\/a>. and chocolate from <a href=\"https:\/\/www.solcacao.com\/\" target=\"_blank\" rel=\"noopener\">Sol Cacao<\/a>. Customers can order also order meat to pick up at the store from <a href=\"https:\/\/ny.butchergirls.co\/\" target=\"_blank\" rel=\"noopener\">Butcher Girls<\/a>, a sustainable and natural online butcher site. The company, which says \u201cMade by Queer People for all People,\u201d used to own a shop where Bloomy Dobbs now is located.<\/p>\n<p class=\"\">There are two cheese cases in the store \u2013 one with fresh, soft-ripened cheeses and charcuterie, and the other with large format, cut cheeses. There are also some grab-and-go items in the store. The cut cheeses list the cheese\u2019s country of origin and has evocative tasting notes under them. Galen says the cheeses are divided 50\/50 between American and European selections, and she\u2019s hoping to expand to Latin American and other cheeses as well. \u201cKeeping seasonality front and center is very important to me \u2013 as springtime and summer cheeses become available there\u2019ll be a strong emphasis on those cheeses.\u201d And Galen says she sees customers who have their own perspective on what they\u2019re looking for, and those who leave the shopping up to the cheesemonger.\u00a0<\/p>\n<p>\u00a0<\/p>\n<h2>Featured Cheeses<\/h2>\n<h3><a href=\"https:\/\/www.saxelbycheese.com\/products\/calderwood\" target=\"_blank\" rel=\"noopener\">Calderwood<\/a><\/h3>\n<figure class=\"sqs-block-image-figure              intrinsic\"><\/p>\n<p>                  <img decoding=\"async\" class=\"thumb-image\" data-image=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5eb43938f468c330e7d8d665\/42009131-ef59-4c5d-a24a-280915eed5cd\/Calderwood.jpg\" data-image-dimensions=\"4032x3024\" data-image-focal-point=\"0.5,0.5\" alt=\"Jasper Hill Calderwood\" data-load=\"false\" data-image-id=\"644c46ff58c843094191ed3a\" data-type=\"image\" src=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5eb43938f468c330e7d8d665\/42009131-ef59-4c5d-a24a-280915eed5cd\/Calderwood.jpg?format=1000w\"><\/p>\n<\/figure>\n<p class=\"\">Galen raves about a collaboration cheese made by industry icons, \u201cThere are a few things I love about this cheese. <a href=\"https:\/\/www.cheeseprofessor.com\/blog\/whats-new-at-jasper-hill\" target=\"_blank\" rel=\"noopener\">Jasper Hill<\/a> is among the leaders in American cheesemaking and affinage. The company is fostering American cheese making, particularly in its neck of the woods. Jasper Hill is always looking to capture a sense of place in its cheeses. The cheese is so delicious and packed with flavor. It has notes of caramel and toasted nut, a really complex flavor profile, and has a super-long finish. Pretty much everyone who tries it comes back for more. I love to use it in classes because there\u2019s so much to talk about. Additionally, it was created in collaboration with <a href=\"https:\/\/www.cheeseprofessor.com\/blog\/remembering-anne-saxelby\" target=\"_blank\" rel=\"noopener\">Anne Saxelby<\/a> and I like to keep her present. The shape brings some levity and visual interest to a cheese plate. The cheese is brought to us from <a href=\"http:\/\/www.rodolphelemeunier.fr\/\" target=\"_blank\" rel=\"noopener\">Rodolphe Le Meunier<\/a>, an incredible affineur in France. According to Galen,<strong> \u201c<\/strong>The texture of this cheese is astonishingly beautiful, and the presentation is stunning. Says Galen, \u201cThis blue cheese has the hint of a really lovely salty note \u2013 the cheese channels the brisk and clean Pacific fresh air. There\u2019s a cleanness to the finish, along with the richness of the cheese.
