There are <a href=\"https:\/\/www.cheesesociety.org\/industry-data\/\"><span>around<\/span><\/a> 1,000 specialty cheesemakers in the U.S., and more than <a href=\"https:\/\/www.thetimes.co.uk\/article\/breaking-the-mould-uks-artisan-cheesemakers-overtake-french-xzcjpfz0m\"><span>1,000 varieties<\/span><\/a> of cheese made in the U.K. alone. But the world of cheese is facing challenges economically and ideologically. We took a hard look at the numbers and spoke to experts to find out what they\u2019re seeing on the ground, and how they are adapting.<\/p>\n<h2><strong>Challenging Conditions <\/strong><\/h2>\n<p class=\"\">For the first time in two decades, the dairy industry in the E.U. is expected to contract by 2.3% this year, according to <a href=\"https:\/\/www.foodingredientsfirst.com\/news\/eu-dairy-industry-forecasts-uncertain-2023-as-milk-availability-is-no-longer-abundant.html\" target=\"_blank\" rel=\"noopener\">Eucolait<\/a>, a high-volume dairy producer. A significant slump in dairy exports to China\u2014down 20% year-over-year, is putting a serious drag on the sector.\u00a0<\/p>\n<p class=\"\">But inflation is a factor too, driving down purchases of the pricier artisanal cheeses that have long defined the dairy culture in Europe. Inflation across the world is at a 45-year-high, with some cheese producers, such as Kerry Dairy Ireland, raising prices by an eye-popping <a href=\"https:\/\/www.foodingredientsfirst.com\/news\/eu-dairy-industry-forecasts-uncertain-2023-as-milk-availability-is-no-longer-abundant.html\" target=\"_blank\" rel=\"noopener\">36.6%.<\/a><\/p>\n<p class=\"\">And in a shift that seems almost antithetical, Europeans, instead of reaching for their prized Gruyere, Asiago and Gouda\u2014are suddenly stocking up on that processed orange stuff that comes in plastic packets.\u00a0<\/p>\n<p class=\"\">Imports are up more than <a href=\"https:\/\/www.bloomberg.com\/news\/articles\/2022-04-13\/europe-has-better-cheese-but-it-buys-cheese-from-us-because-it-s-cheaper\" target=\"_blank\" rel=\"noopener\">threefold<\/a>, and while it\u2019s still a drop in the bucket compared to European consumption of European cheese, the sudden interest in American faux-fromage is raising alarm bells.\u00a0<\/p>\n<h2><strong>The Plant Based Diet Challenge<\/strong><\/h2>\n<p class=\"\">In addition to watching their wallets, more consumers are keeping an eye on their dairy intake.\u00a0<\/p>\n<p class=\"\">The dairy cheese market is projected to grow at a compound annual growth rate of <a href=\"https:\/\/www.fortunebusinessinsights.com\/cheese-market-104293\" target=\"_blank\" rel=\"noopener\">3.84%<\/a> through 2028, according to Fortune Business Insights\u2014not declining, and not completely flat, but certainly not robust.\u00a0<\/p>\n<p class=\"\">The vegan cheese market, meanwhile, is expected to expand at a compound annual growth rate of <a href=\"https:\/\/www.grandviewresearch.com\/industry-analysis\/vegan-cheese-market\" target=\"_blank\" rel=\"noopener\">12.6%<\/a> through 2030, according to projections from Grand View Research, a strong arc fueled largely by millennials and younger consumers concerned about animal welfare and climate change.\u00a0<\/p>\n<p class=\"\">In a nod to the evolving interests of would-be cheese-lovers, producers are addressing concerns head-on and more and more are also producing plant-based cheese alternatives.<\/p>\n<h2><strong>Changing the Channel<\/strong><\/h2>\n<figure class=\"sqs-block-image-figure              intrinsic\"><\/p>\n<p>                  <img decoding=\"async\" class=\"thumb-image\" data-image=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5eb43938f468c330e7d8d665\/4c853215-a179-4e78-a58b-f4a61d2af554\/Chad+Galer.jpg\" data-image-dimensions=\"2528x2463\" data-image-focal-point=\"0.5,0.5\" alt=\"Chad Galer\" data-load=\"false\" data-image-id=\"63f90af82e11394e2e13f537\" data-type=\"image\" src=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5eb43938f468c330e7d8d665\/4c853215-a179-4e78-a58b-f4a61d2af554\/Chad Galer.jpg?format=1000w\"><figcaption class=\"image-caption-wrapper\">\n<p class=\"\">Chad Galer<\/p>\n<\/figcaption><\/figure>\n<p class=\"\">For starters, cheesemakers across the world are changing their marketing channels. Spoiler: print is out, digital is in.\u00a0<\/p>\n<p class=\"\">\u201cWe are trying to reach younger people where they are, on social media and through gaming influencers,\u201d says Chad Galer, vice president of product innovation and food safety at <a href=\"https:\/\/www.usdairy.com\/about-us\/dmi\" target=\"_blank\" rel=\"noopener\">Dairy Management<\/a>, an outreach organization funded by 37,000+ dairy farmers in the U.S.\u00a0<\/p>\n<p class=\"\">It also means a tweak in messaging. Instead of focusing on a cheese\u2019s luxurious, gourmet aspirational side, there will be talk about the environment.\u00a0<\/p>\n<p class=\"\">\u201cThe younger generation is passionate about the environment and animal care,\u201d Galer says. \u201cWe strive to share how invested cheesemakers and dairy farmers are in sustainability efforts and how farmers are in fact stewards of sustainability.\u201d<\/p>\n<p class=\"\">Maria Vittoria Finco, marketing manager of Italy\u2019s <a href=\"https:\/\/www.montitrentini.com\/index.php\/en\" target=\"_blank\" rel=\"noopener\">Monti Trentini<\/a>, and a fourth-generation cheesemaker based in Grigno, hears concerns over the environment loud and clear.\u00a0<\/p>\n<figure class=\"sqs-block-image-figure              intrinsic\"><\/p>\n<p>                  <img decoding=\"async\" class=\"thumb-image\" data-image=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5eb43938f468c330e7d8d665\/7ed62d4e-290d-458e-a5ce-926a390b8aa0\/Maria+Vittoria+Finco.jpg\" data-image-dimensions=\"1787x2348\" data-image-focal-point=\"0.5,0.5\" alt=\"Maria Vittoria Finco\" data-load=\"false\" data-image-id=\"63f90b2f6893746ebd1804d2\" data-type=\"image\" src=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5eb43938f468c330e7d8d665\/7ed62d4e-290d-458e-a5ce-926a390b8aa0\/Maria Vittoria Finco.jpg?format=1000w\"><figcaption class=\"image-caption-wrapper\">\n<p class=\"\">Maria Vittoria Finco<\/p>\n<\/figcaption><\/figure>\n<p class=\"\">\u201cIt is well known that in general the cheese industry requires a lot of energy and water and it\u2019s responsible for emissions of CO2,\u201d Finco says. \u201cTaking this and the environmental sensibility of younger generations into consideration makes it easy to understand the reluctance of such an audience to invest in cheese. As not only a company, but also as people that care about the environment, we understand this issue and that\u2019s why we are actively reducing our energy and water consumption as well as the emissions of CO2.\u201d<\/p>\n<h2><strong>Addressing Health Concerns <\/strong><\/h2>\n<p class=\"\">Cheesemakers are also taking note of many of the food and health issues younger consumers are concerned about.\u00a0<\/p>\n<p class=\"\">\u201cWe focus on the protein power of cheese, and how it actually has little to no lactose, allowing many people concerned about digestive issues to enjoy this form of dairy,\u201d Galer says. \u201cWe also know that digestive health more broadly is a top concern. We work with social media influencers on TikTok, Instagram and Snapchat to share that in an authentic way.\u201d Galer also points to cheese defining many viral TikTok recipes, like <a href=\"https:\/\/www.foodnetwork.com\/fn-dish\/news\/how-to-tiktok-baked-feta-pasta-recipe-developer-tips\" target=\"_blank\" rel=\"noopener\">Baked Feta Pasta<\/a>.\u00a0<\/p>\n<p class=\"\">The desire for \u201ccleaner\u201d eating is another way Monti Trentini is finding inroads with younger would-be curd nerds. \u201cNatural food products free of preservatives are increasingly important to younger people,\u201d says Finco, who is focusing on sharing the message that \u201ccheese is made only with three simple ingredients: milk, salt and rennet.\u201d<\/p>\n<h2><strong>Innovating the Product <\/strong><\/h2>\n<figure class=\"sqs-block-image-figure              intrinsic\"><\/p>\n<p>                  <img decoding=\"async\" class=\"thumb-image\" data-image=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5eb43938f468c330e7d8d665\/2f211ab9-7602-405c-9ec8-f97e26ddc263\/More+cheeses-min+%281%29.jpg\" data-image-dimensions=\"5697x3798\" data-image-focal-point=\"0.5,0.5\" alt=\"Cheese board with fruit\" data-load=\"false\" data-image-id=\"63f90dd1abc69b3b3f7aab9c\" data-type=\"image\" src=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5eb43938f468c330e7d8d665\/2f211ab9-7602-405c-9ec8-f97e26ddc263\/More cheeses-min (1).jpg?format=1000w\"><\/p>\n<\/figure>\n<p class=\"\">Cheesemakers are also thinking outside of the classic wheel.\u00a0<\/p>\n<p class=\"\">\u201cA number of hybrid specialty cheese, like Cheddar and Parmesan mash-ups, or Brie and Cheddar, are gaining traction,\u201d Galer says. \u201cWe are also seeing more cheeses with ingredients that are perceived as calming, like lavender or chamomile. I expect the trend to increase because the idea of calming is so important to Generation Z.\u201d Producers have also expanded their portfolios with more flavors. <em>Read more about <\/em><a href=\"https:\/\/www.cheeseprofessor.com\/blog\/flavored-cheeses-pros-cons\" target=\"_blank\" rel=\"noopener\"><em>flavored cheeses.<\/em><\/a><\/p>\n<p class=\"\">In Italy, where tradition is part of the way the entire culture defines itself, innovation that manages to respect history, is becoming increasingly important.\u00a0<\/p>\n<p class=\"\">\u201cWe have developed a line of cheese that combines artisanal production methods and new flavors,\u201d says Finco. \u201cWe have a line of Truffle Caciotta Cheese with two distinct products, both with real pieces of truffle inside. One is a fresh Caciotta cheese aged only a couple of weeks, soft in texture and white in color, the other one is an aged Caciotta cheese, covered by a black coating, more granular in texture and more yellow in color.\u201d<\/p>\n<figure class=\"sqs-block-image-figure              intrinsic\"><\/p>\n<p>                  <img decoding=\"async\" class=\"thumb-image\" data-image=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5eb43938f468c330e7d8d665\/8e74161e-e995-4618-9203-93357fe18ce5\/Emilio+Mignucci.jpg\" data-image-dimensions=\"2000x3000\" data-image-focal-point=\"0.5,0.5\" alt=\"Emilio Mignucchi\" data-load=\"false\" data-image-id=\"63f90dfc7cae830fd55452a8\" data-type=\"image\" src=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5eb43938f468c330e7d8d665\/8e74161e-e995-4618-9203-93357fe18ce5\/Emilio Mignucci.jpg?format=1000w\"><figcaption class=\"image-caption-wrapper\">\n<p class=\"\">Emilio Mignucchi<\/p>\n<\/figcaption><\/figure>\n<p class=\"\">Artisan purveyors, meanwhile, treat each cube of cheese as a hand-sale and an opportunity.\u00a0<\/p>\n<p class=\"\">\u201cWe have a core group of young folks who come in interested in good food and want a great food experience,\u201d says Emilio Mignucci, vice president at <a href=\"https:\/\/www.cheeseprofessor.com\/blog\/cheese-shops-we-love-di-bruno-bros\" target=\"_blank\" rel=\"noopener\">Di Bruno Bros<\/a>., a Philadelphia-based gourmet food emporium. \u201cLet\u2019s face it, cheese is not inexpensive, and really well-made cheese can be very pricey. It can be intimidating because you want to spend wisely. As Michael Pollan explained in <em>The Omnivore\u2019s Dilemma<\/em>, and this I believe is very relevant today\u2014real food, well-made and sustainably grown, comes with a cost.\u201d<\/p>\n<p class=\"\">Mignucci sees it as his personal mission to share not just the flavors and history of the cheese he sells, but the stories of the families behind them.\u00a0<\/p>\n<p class=\"\">\u201cWhen they not only sample the cheese, but understand the social and economic impact that the cheese has for the families and places it comes from, their appreciation for it increases,\u201d he says.\u00a0<\/p>\n<p class=\"\">The taste of the cheese is important\u2014even essential. But presenting it in a way that it appeals to the new generation?
