Truffle season peaks right around Valentine\u2019s Day making it a popular ingredient, especially when paired with cheese in everything from mac and cheese to souffles to scrambled eggs.\u00a0Wisconsin\u2019s versatile truffle cheeses are good on cheeseboards or in recipes. <\/p>\n<p>\u00a0<\/p>\n<h2><strong>Using Real Truffles <\/strong><\/h2>\n<p class=\"\">\u201cThe flavors that truffles bring through are great,\u201d says Tony Hook, proprietor of <a href=\"https:\/\/hookscheese.com\/\" target=\"_blank\" rel=\"noopener\">Hook\u2019s Cheese<\/a>. Hook first made his truffle cheddar cheese using truffle powder and truffle oil, but then he did an experimental batch with real black, summer truffles from Italy. \u201cI really didn\u2019t think it was going to be good because the sales rep said you don\u2019t need to use very much, and we didn\u2019t add that much,\u201d he says. \u201cBut, wow, the flavor really comes through. It was good (with the oil and powder), but with the real truffles, it\u2019s unbelievable.\u201d Hook now makes two truffled cheeses &#8211; his original truffle cheddar and a sheep\u2019s milk truffle cheese that is more in the style of a Monterey Jack.\u00a0<\/p>\n<p>\u00a0<\/p>\n<h2><strong>From Burrata to Raclette <\/strong><\/h2>\n<p class=\"\">\u201cTruffles are definitely becoming trendy,\u201d says Alexanndrya Barnickle-Miller, marketing specialist for <a href=\"https:\/\/www.mariekegouda.com\/\" target=\"_blank\" rel=\"noopener\">Marieke Gouda<\/a>, which makes a truffle gouda. \u201cIt\u2019s definitely something that\u2019s picked up space instead of just being a holiday or special events cheese. Now, it\u2019s a year-round cheese, and it\u2019s very popular.\u201d<\/p>\n<p class=\"\">Hook notes that more cheesemakers are starting to add truffle to cheeses. \u201cI hope it\u2019s not a fad,\u201d he says. \u201cSome of the cheese we\u2019ve made, like pesto jack for tomato basil, they were a big hit, but then they fade in popularity. Truffles have staying power, and they\u2019re (akin) to pepper cheeses, which have grown and grown in popularity.\u201d<\/p>\n<p class=\"\">Ashley Ward, spokeswoman for <a href=\"https:\/\/www.burnettdairy.com\/\" target=\"_blank\" rel=\"noopener\">Burnett Dairy<\/a>, which makes Wood River Creamery Black Truffle Cheddar Gruyere, says that the black truffle version is one of the most popular versions of this cheese. But, she adds, not everyone likes truffles. \u201cYou either love or hate the truffle,\u201d she says.<\/p>\n<p class=\"\">But many people love the truffle flavor.\u00a0 \u201cIt\u2019s like unwrapping a gift,\u201d says Sofa\u00a0<\/p>\n<p class=\"\">Auricchio Krans, fifth generation cheesemaker, <a href=\"https:\/\/www.belgioioso.com\/\" target=\"_blank\" rel=\"noopener\">BelGioioso Cheese<\/a>, a family-owned creamery. \u201cYou have the sweet, milky flavor and freshness of the cream, and that robust and earthy flavor from the black, summer truffle. That unique, strong flavor balances with the freshness and the sweet mildness of the mozzarella.\u201d<\/p>\n<p class=\"\">\u201cTruffle has really earthy, umami flavors,\u201d says Paula Heimerl, co-owner of <a href=\"https:\/\/www.alpinagecheese.com\/\" target=\"_blank\" rel=\"noopener\">Alpinage Artisan Cheese<\/a>, which makes a truffle flavor of their raclette cheese, Mount Raclette truffle. Heimerl recommends using their cheese in macaroni and cheese, but truffle cheese also works well in mashed potatoes, other pasta dishes, flatbreads, and even burgers and steaks.\u00a0<\/p>\n<p class=\"\">Krans says their fresh burrata with truffles works great on a cheese plate as the finishing cheese, especially if you start with a crescenza, then add a blue cheese like gorgonzola, and finish with the truffle cheese.
