{"id":2571,"date":"2023-09-28T16:29:18","date_gmt":"2023-09-28T16:29:18","guid":{"rendered":"https:\/\/www.sutyo.com\/how-the-anne-saxelby-legacy-fund-is-ensuring-a-bright-future-for-american-artisanal-cheese\/"},"modified":"2023-09-28T16:29:18","modified_gmt":"2023-09-28T16:29:18","slug":"how-the-anne-saxelby-legacy-fund-is-ensuring-a-bright-future-for-american-artisanal-cheese","status":"publish","type":"post","link":"https:\/\/www.sutyo.com\/tr\/how-the-anne-saxelby-legacy-fund-is-ensuring-a-bright-future-for-american-artisanal-cheese\/","title":{"rendered":"How The Anne Saxelby Legacy Fund is Ensuring a Bright Future for American Artisanal Cheese"},"content":{"rendered":"<div>\n<p class=\"\">In the wake of beloved cheese personality <a href=\"https:\/\/www.cheeseprofessor.com\/blog\/remembering-anne-saxelby\" target=\"_blank\" rel=\"noopener\">Anne Saxelby\u2019s untimely death<\/a>, her husband, Patrick Martins, founder of <a href=\"https:\/\/heritagefoods.com\/\" target=\"_blank\" rel=\"noopener\">Heritage Foods USA<\/a>, knew that something needed to be done to continue her work. \u201cRight away I knew we had to do something to keep her memory alive, keep her active and part of the news,\u201d he says. \u201cI had to do something big.\u201d What Anne Saxelby created in her short life is already incredibly impactful, and so it\u2019s fitting that the project Martins spearheaded to honor his late wife, along with her mother Pam Saxelby, was deemed the <a href=\"https:\/\/www.annesaxelbylegacyfund.org\/\" target=\"_blank\" rel=\"noopener\">Anne Saxelby Legacy Fund<\/a>. (ASLF)<\/p>\n<p>\u00a0<\/p>\n<figure class=\"sqs-block-image-figure              intrinsic\"><\/p>\n<p>              <img decoding=\"async\" class=\"thumb-image\" data-image=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5eb43938f468c330e7d8d665\/0b843ea2-58c9-4f45-a2a5-d62f292240c5\/anne+saxelby+at+the+cheese+counter.jpeg\" data-image-dimensions=\"2048x1365\" data-image-focal-point=\"0.5,0.5\" alt=\"Anne Saxelby at the cheese counter\" data-load=\"false\" data-image-id=\"62a022ab26bdf8321dcc169f\" data-type=\"image\" src=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5eb43938f468c330e7d8d665\/0b843ea2-58c9-4f45-a2a5-d62f292240c5\/anne saxelby at the cheese counter.jpeg?format=1000w\"><\/p>\n<\/figure>\n<p class=\"\">As the founder of <a href=\"https:\/\/saxelbycheese.com\/\" target=\"_blank\" rel=\"noopener\">Saxelby Cheesemongers<\/a>, Anne Saxelby was a champion for American artisanal and farmstead cheeses, connecting chefs and consumers to the small farms and creameries that were producing world-class cheeses domestically. Her passion for American dairies began when she was quite young, as an apprentice at <a href=\"https:\/\/www.catocornerfarm.com\/\" target=\"_blank\" rel=\"noopener\">Cato Corner Farm<\/a> in her early 20s. She would go on to found <a href=\"https:\/\/www.cheeseprofessor.com\/blog\/saxelby-cheesemongers\" target=\"_blank\" rel=\"noopener\">Saxelby\u2019s<\/a> in her mid-20s as a purveyor of only American cheese, (except for Parmigiano Reggiano, which knows no domestic equal,) first in the Lower East Side\u2019s Essex Market, eventually moving to <a href=\"https:\/\/www.chelseamarket.com\/\" target=\"_blank\" rel=\"noopener\">Chelsea Market<\/a>. Just a year before her death she published <a href=\"https:\/\/saxelbycheese.com\/products\/the-new-rules-of-cheese\" target=\"_blank\" rel=\"noopener\">The New Rules of Cheese, a Freewheeling and Informative Guide<\/a>.<\/p>\n<p>\u00a0<\/p>\n<figure class=\"sqs-block-image-figure              intrinsic\"><\/p>\n<p>              <img decoding=\"async\" class=\"thumb-image\" data-image=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5eb43938f468c330e7d8d665\/4b9ada9b-24be-4009-8bb3-6de2a87572f8\/Dairy+cows.jpg\" data-image-dimensions=\"2000x1500\" data-image-focal-point=\"0.5,0.5\" alt=\"Dairy cows in pasture\" data-load=\"false\" data-image-id=\"62a0245956597b19483c5bc6\" data-type=\"image\" src=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5eb43938f468c330e7d8d665\/4b9ada9b-24be-4009-8bb3-6de2a87572f8\/Dairy cows.jpg?format=1000w\"><\/p>\n<\/figure>\n<h2><strong>Apprenticeship Program<\/strong><\/h2>\n<p class=\"\">Beginning in a similar place as Saxelby did early in her career, the first element of the ASLF was to establish an apprenticeship program with American cheesemakers, farms, and agricultural organizations. \u201cI emailed all of her cheese makers,\u201d says Martins, \u201cand asked would any of you be willing to carry on this idea that she did in her 20s?\u201d Specifically connecting farms and creameries in need of labor with ambitious young adults without easy access to farms. \u201cAnd all these farms right away were like, \u2018we\u2019re in,\u2019\u201d says Martins. \u201cEverybody else was just like me\u2014they didn&#8217;t want to just relegate Anne to memory; she always left a little bit of herself with all these people.\u201d\u00a0<\/p>\n<p class=\"\">The apprenticeship application process launched just a few months after Saxelby\u2019s death, accepting donations from colleagues and friends, and utilizing Slow Food as an umbrella company until ASLF is approved for non-profit status. With support from agricultural education programs at UCLA and Oregon State University, over 200 people applied, and for its inaugural year, approximately 33 apprentices will have paid, month-long appointments at 15 different agricultural organizations around the U.S. this summer, including cheese makers such as <a href=\"https:\/\/www.considerbardwellfarm.com\/\" target=\"_blank\" rel=\"noopener\">Consider Bardwell<\/a>, <a href=\"https:\/\/uplandscheese.com\/\" target=\"_blank\" rel=\"noopener\">Uplands<\/a>, <a href=\"https:\/\/www.jasperhillfarm.com\/\" target=\"_blank\" rel=\"noopener\">Jasper Hill<\/a>, and <a href=\"https:\/\/www.sbfcheese.org\/\" target=\"_blank\" rel=\"noopener\">Spring Brook Farm<\/a>. The <a href=\"http:\/\/anishinaabeagriculture.org\/\" target=\"_blank\" rel=\"noopener\">Anishinaabe Agriculture Institute<\/a> in Osage, MN, a sustainable farming operation with an emphasis in native food sovereignty, will host <a href=\"https:\/\/www.annesaxelbylegacyfund.org\/2022-inaugural-class\">10 of this year\u2019s apprentices<\/a>, which were announced on June 9th, 2022. <\/p>\n<p class=\"\">The ASLF, along with the partner farms and organizations, covers all of the costs of the apprentices\u2019 stay, as well as pays them for full-time work during their appointments. \u201cIt&#8217;s like St. Jude&#8217;s of the apprenticeship world,\u201d says Martins. \u201cThe apprentice pays nothing at all. She loved markets.\u201d\u00a0<\/p>\n<p class=\"\">With the apprenticeship program underway, the next piece for the ASLF was hosting an event that would celebrate Anne Saxelby\u2019s life, as well as raise money for the ongoing scope of what the organization wants to do. Again, Saxelby\u2019s individual legacy is very much helping to create momentum for her institutional legacy. She is largely responsible for turning on New York chefs to the work of American artisanal dairies. \u201cShe would go around to all these restaurants with 50 pounds of cheese in the back of her bike seat with her youthful, entrepreneurial, Midwestern energy,\u201d says Martins, and everybody was always charmed by her. So when the time also came to ask for support for a gala event to raise money for the ASLF, everybody who knew Anne wanted in. \u201cI was like, \u2018would you?\u2019 and they were like, \u2018yes,\u2019\u201d says Martins. \u201c\u2018Don&#8217;t even ask; you don&#8217;t even have to finish the sentence, we&#8217;re in.\u2019\u201d NYC heavy hitters such as <a href=\"https:\/\/www.frenchettenyc.com\/\" target=\"_blank\" rel=\"noopener\">Frenchette<\/a>, <a href=\"https:\/\/www.gageandtollner.com\/\" target=\"_blank\" rel=\"noopener\">Gage &amp; Tollner<\/a>, <a href=\"https:\/\/www.gramercytavern.com\/\" target=\"_blank\" rel=\"noopener\">Gramercy Tavern<\/a>, and <a href=\"https:\/\/momofuku.com\/\" target=\"_blank\" rel=\"noopener\">Momofuku<\/a> are among the many who will have a presence at the event this September (tickets start at $50 for students, $100 for apprentices, and $250 for general admission).\u00a0<\/p>\n<p>\u00a0<\/p>\n<figure class=\"sqs-block-image-figure              intrinsic\"><\/p>\n<p>              <img decoding=\"async\" class=\"thumb-image\" data-image=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5eb43938f468c330e7d8d665\/d41afb02-31a7-424e-89e1-fb85e493e04e\/ASLF+Logo.png\" data-image-dimensions=\"751x826\" data-image-focal-point=\"0.5,0.5\" alt=\"Anne Saxelby Legacy Fund\" data-load=\"false\" data-image-id=\"62a025361550e55511b97955\" data-type=\"image\" src=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5eb43938f468c330e7d8d665\/d41afb02-31a7-424e-89e1-fb85e493e04e\/ASLF Logo.png?format=1000w\"><\/p>\n<\/figure>\n<h2><strong>Connecting People and Building a Movement<\/strong><\/h2>\n<p class=\"\">\u201cAnne had this idea of Republicans and Democrats exchanging their teenagers for a month,\u201d jokes Martins. \u201cI don\u2019t know if she read it somewhere or came up with it herself.\u201d While fanciful and in all likelihood facetious, Martins and Saxelby both understood how a better understanding of how the other half lives could be a real catalyst for positive change, which can easily begin with opportunities like the ASLF apprenticeship program, to connect people, especially from suburbs and cities, with the agricultural communities that produce food in this country. \u201cWe just want to add momentum to that whole movement of people exchanging, and learning from working with each other,\u201d says Martins. The ASLF hopes to scale up to be able to provide transformative, agricultural experiences to as many aspirational young adults as possible.<\/p>\n<p class=\"\">\u201cI think there&#8217;s a desire to see an agriculturally based Peace Corps style organization grow in the U.S.,\u201d says Martins. \u201cI think that resonates with people; young adults working on sustainable farms,\u201d he says, which is what he hopes to build the ASLF into, with a rolling application process for apprenticeships and appointments happening year-round.
