Kutu s\u00fctlerde ise \u00e7ok daha y\u00fcksek \u0131s\u0131 UHT y\u00f6ntemi (Ultra High Temperature) kullan\u0131l\u0131yor. S\u00fct 135-150 derece s\u0131cakl\u0131kta 2-4 saniye \u0131s\u0131t\u0131l\u0131yor. Klasik evde kaynatma usul\u00fcnde ise; s\u0131cakl\u0131k yava\u015f yava\u015f 95-100 dereceye \u00e7\u0131k\u0131yor, bir ta\u015f\u0131m kaynat\u0131l\u0131p ocak kapat\u0131l\u0131yor. UHT&#8217;li s\u00fct 4 ay, past\u00f6rize 3 g\u00fcn, evde kaynat\u0131lan ise daha az dayan\u0131yor. B\u00fct\u00fcn bu \u0131s\u0131l i\u015flemler s\u00fctteki faydal\u0131 bakterileri, onlar\u0131n \u00fcrettikleri enzim ve vitaminleri de tahrip ediyor. Ama en b\u00fcy\u00fck kay\u0131p UHT teknolojisi uyguland\u0131\u011f\u0131nda ya\u015fan\u0131yor. Bundan dolay\u0131 sokak s\u00fct\u00fc ya da past\u00f6rize \u015fi\u015fe s\u00fctte yo\u011furt tutarken kutu s\u00fctte tutmuyor. <a href=\"http:\/\/www.uhtsut.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">UHT<\/a> y\u00f6ntemi suda \u00e7\u00f6z\u00fcnen vitaminlerin neredeyse y\u00fczde 80&#8217;ini ve B12 vitamininin ise tamam\u0131n\u0131 ortadan kald\u0131r\u0131yor. Ba\u011f\u0131rsaktaki probiyotiklere (yararl\u0131 bakterilere) zarar vererek onlar\u0131n ba\u011f\u0131rsa\u011f\u0131m\u0131zda sentezledi\u011fi vitaminlerin \u00fcretiminin de azalmas\u0131na sebep oluyor.<\/p>\n<p>S\u00fct i\u00e7indeki minerallere gelince; kalsiyumun da d\u00e2hil oldu\u011fu bir\u00e7ok mineralin v\u00fccut taraf\u0131ndan al\u0131nabilme ve kullan\u0131labilme \u00f6zellikleri de b\u00fcy\u00fck \u00f6l\u00e7\u00fcde yok oluyor. Bu konuyu ara\u015ft\u0131ran bilgisi olan doktorlar, bilim adamlar\u0131 Sa\u011fl\u0131k Bakanl\u0131\u011f\u0131 ile g\u00f6r\u00fc\u015fmeler yap\u0131yormu? \u00c7\u00f6z\u00fcm \u00e7i\u011f s\u00fct almak m\u0131? Sadece s\u00fct de\u011fil tavuk ve yumrta \u00fcretiminde de sa\u011fl\u0131\u011fa ayk\u0131r\u0131 y\u00f6ntemler kullan\u0131ld\u0131\u011f\u0131 biliniyor. Uzun boylu, ak\u0131ll\u0131, g\u00fc\u00e7l\u00fc kuvvetli olmak i\u00e7in l\u0131k\u0131r l\u0131k\u0131r i\u00e7ti\u011fimiz s\u00fct\u00fcm\u00fcz nas\u0131l oldu da y\u00fczlerce \u00f6\u011frenciyi hastane kap\u0131lar\u0131na d\u00fc\u015f\u00fcrd\u00fc sorusu kafalar\u0131 kurcal\u0131yor. Ge\u00e7en \u00e7ar\u015famba g\u00fcn\u00fcnden itibaren ba\u015flayan tart\u0131\u015fmada her kafadan bir ses \u00e7\u0131k\u0131yor. Uzun \u00f6m\u00fcrl\u00fc UHT s\u00fctler faydal\u0131 m\u0131, past\u00f6rize s\u00fct ile aras\u0131ndaki fark ne, g\u00fc\u011f\u00fcm s\u00fctleri ne kadar yararl\u0131, gibi sorulara uzmanlardan ald\u0131\u011f\u0131m\u0131z yan\u0131tlar kafalar\u0131m\u0131z\u0131 \u2018s\u00fctliman\u2019 yapacak gibi g\u00f6r\u00fcn\u00fcyor.<\/p>\n<p>\u2018UHT s\u00fct k\u00f6t\u00fc diyen bilim insan\u0131 olamaz\u2019<br \/>\nProf. Dr. Funda Elmac\u0131o\u011flu (Marmara \u00dcniversitesi Sa\u011fl\u0131k Bilimleri Fak\u00fcltesi Beslenme ve Diyetetik B\u00f6l\u00fcm Ba\u015fkan\u0131): UHT s\u00fct\u00fcn k\u00f6t\u00fc oldu\u011funu s\u00f6yleyen bilim insan\u0131 olamaz. UHT teknolojisi kullan\u0131larak i\u00e7meye haz\u0131r hale gelen s\u00fct, ne protein ne de kalsiyum de\u011ferinden bir \u015fey kaybeder. Tam tersine insan metabolizmas\u0131na zararl\u0131 olan bakteri ve mikroorganizmalar \u00f6ld\u00fc\u011f\u00fc i\u00e7in g\u0131daya g\u00fcvenli bir ula\u015f\u0131m sa\u011flar. UHT s\u00fct\u00fc k\u00f6t\u00fcleyen ki\u015filer sadece pop\u00fcler beslenme bilgileriyle topluma \u00e7ok b\u00fcy\u00fck zarar veriyorlar. Mahallede ya da sokak s\u00fct\u00e7\u00fcs\u00fcnden al\u0131nan s\u00fct\u00fcn i\u00e7eri\u011fini bilimiyoruz. Hangi \u015fartlardan ge\u00e7ti, hangi ko\u015fullarda korundu gibi sorular\u0131n yan\u0131t\u0131 yok. Son g\u00fcnlerde okullarda da\u011f\u0131t\u0131lan s\u00fctlerle ilgili k\u0131yamet koptu ama \u015fu ger\u00e7e\u011fe dikkat \u00e7ekmek isterim, T\u00fcrk geneti\u011finde laktaz yetersizli\u011fi var. Bu oran da olduk\u00e7a y\u00fcksek. 70 milyonun y\u00fczde 33\u2019\u00fcnde. UHT s\u00fct hakk\u0131nda ileri geri konu\u015fanlarla bir araya gelerek marketten gidip bir UHT s\u00fct al\u0131p, laboratuvarda test ettirelim. Bakal\u0131m besin de\u011ferleri kaybolmu\u015f mu. Evet UHT s\u00fct\u00fcn i\u00e7indeki mikroorganizmalar yok oluyor ancak bu s\u0131rada \u00e7ok az miktarda besin de\u011feri kayboluyor. A\u00e7\u0131k s\u00fct\u00fc al\u0131p, evde kaynatmak s\u00fct\u00fcn daha fazla besin de\u011feri kaybetmesine neden olur. Past\u00f6rize s\u00fct ise UHT s\u00fct kadar y\u00fcksek \u0131s\u0131da i\u015flemden ge\u00e7medi\u011fi i\u00e7in baz\u0131 bakterileri i\u00e7inde korur. Ama bu y\u00fczden k\u0131sa s\u00fcrede bozulur. Yurt genelindeki bir kampanya past\u00f6rize s\u00fct ile yap\u0131l\u0131rsa, so\u011fuk zinciri korumak sorun yaratabilece\u011fi i\u00e7in daha b\u00fcy\u00fck sorunlar \u00e7\u0131kabilir. S\u00fct yerine mand\u0131radan al\u0131nm\u0131\u015f s\u00fct\u00fc i\u00e7in ve bu s\u00fctle yap\u0131lan ek\u015fiyebilen, t\u0131pk\u0131 annelerimizin yapt\u0131\u011f\u0131 gibi yo\u011furt yap\u0131p yiyin. UHT edilmi\u015f s\u00fct\u00fcn hi\u00e7bir faydas\u0131 yok. Ayr\u0131ca UHT s\u00fct ba\u011f\u0131ml\u0131l\u0131k yarat\u0131yor, dikkat da\u011f\u0131n\u0131kl\u0131\u011f\u0131 ve ac\u0131ya kar\u015f\u0131 dayan\u0131kl\u0131l\u0131k geli\u015fiyor. Bakanl\u0131k okullarda taze past\u00f6rize s\u00fct ya da bu s\u00fctle yap\u0131lan yo\u011furt da\u011f\u0131tabilir. Past\u00f6rizasyon, s\u00fct\u00fcn vitamin ve mineralle zenginle\u015fmesini engelliyor, sindirim enzimlerini tahrip ediyor. Okullarda s\u00fct da\u011f\u0131tmak i\u00e7in ad\u0131m at\u0131lmas\u0131 do\u011fru, ancak bu taze g\u00fcnl\u00fck past\u00f6rize s\u00fctle yap\u0131lmal\u0131.<\/p>\n<p>S\u00fct alerjisi nedir? UHT s\u00fctlerin \u00fcretiminde kaliteli \u00e7i\u011f s\u00fct kullan\u0131l\u0131r. \u00c7\u00fcnk\u00fc ancak y\u00fcksek kaliteli, az say\u0131da bakteri i\u00e7eren s\u00fctler UHT \u0131s\u0131l i\u015flemine uygundur.<br \/>\nModern s\u00fct sa\u011fma sistemleri herhangi bir rahats\u0131zl\u0131k<br \/>\nyaratmaz. \u0130neklerin rahat\u0131n\u0131 d\u00fc\u015f\u00fcnerek tasarlanm\u0131\u015ft\u0131r.<br \/>\nBu sistemler memede bir miktar s\u00fct kalmas\u0131n\u0131 sa\u011flar.<br \/>\nBu sayede hayvanlar kendini iyi hisseder ve taze s\u00fct \u00fcretilir.<br \/>\nS\u00fct\u00fcn hava ile temas\u0131 ile bakteriler s\u00fct\u00fcn i\u00e7ine girebilir<br \/>\nve h\u0131zla \u00e7o\u011falarak \u00fcr\u00fcn\u00fcn bozulmas\u0131na neden olabilir.<br \/>\nBu s\u00fcrecin \u00f6n\u00fcne ge\u00e7mek i\u00e7in<br \/>\ns\u00fct +4\u00b0C&#8217;ye kadar so\u011futulmal\u0131d\u0131r.<br \/>\nS\u00fct\u00fc 4 saniyede g\u00fcvenli hale getirir.<\/p>\n<p>S\u00fct, UHT i\u015flemi s\u0131ras\u0131nda 2-6 saniye boyunca<br \/>\n135- 150\u00b0C aras\u0131nda \u0131s\u0131t\u0131l\u0131r ve an\u0131nda so\u011futulur.<br \/>\nMineral de\u011ferler tamamen korunurken vitamin de\u011ferlerinde minimal kay\u0131plar ya\u015fan\u0131r.
