The joy and gustatory delight a dripping dollop of pungent, creamy Limburger delivers to your tongue also delivers a serious dose of carbon to the atmosphere. Part of the problem is that it takes a lot of milk to make a wee wedge of cheese. Animals with more than one stomach chamber, like cows, sheep and goats, expel considerable methane as they digest their food, producing a gas that has more than <a href=\"https:\/\/www.edf.org\/climate\/methane-crucial-opportunity-climate-fight#:~:text=Methane%20has%20more%20than%2080,by%20methane%20from%20human%20actions.\" target=\"_blank\">80 times <\/a>the global warming impact of carbon dioxide in the first 20 years it reaches the atmosphere.\u00a0<\/p>\n<p class=\"\">In addition to methane, producing and transporting the cheese is also carbon-intensive. But one piece of good news is, the cheese you put on your burger is far less polluting than the burger itself. For every 100 grams of beef, an incredible 49.89 kg of carbon is produced. Cheese, meanwhile, produces a comparatively modest 10.82 kg, but that is still much higher than bananas, rice, lab grown meat, eggs, etc. according to a <a href=\"https:\/\/www.science.org\/doi\/10.1126\/science.aaq0216\" target=\"_blank\">report<\/a>, from the largest ever analysis of the global impacts of food production.<\/p>\n<p class=\"\">In the end, there\u2019s no such thing as &#8220;green&#8221; cheese, unless it\u2019s been tragically struck by an unwelcome attack of fungi. But there are some surprising shortcuts to greener cheese that won\u2019t require medical attention.\u00a0\u00a0<\/p>\n<p>\u00a0<\/p>\n<h2>Think Small &amp; Local(ish)<\/h2>\n<figure href=\"https:\/\/www.foodandwaterwatch.org\/2024\/02\/14\/new-usda-data-show-60-increase-in-factory-farmed-dairy-cows-in-oregon-over-20-years\/\" target=\"_blank\">60% increase<\/a> in the number of cows at big dairy farms in Oregon alone between 2002 and 2022.\u00a0<\/p>\n<p class=\"\">According to an <a href=\"https:\/\/www.unep.org\/news-and-stories\/story\/10-things-you-should-know-about-industrial-farming\" target=\"_blank\">article<\/a> shared by the United Nations, industrial-style dairy farms produce more greenhouse gas emissions than smaller, pasture-based farms, contaminating water and soil with large volumes of manure and growth hormones released into municipal water sources, facilitate the spread of diseases from animals to humans, contribute to the rise in zoonotic diseases and spread antibiotic resistance.<\/p>\n<p class=\"\">One of the easiest ways to ensure you\u2019re buying greener and tastier cheese is to purchase cheese made by a small family farm, ideally from a cheesemaker in your region to reduce the carbon footprint of also means you\u2019re investing in your own community.\u00a0<\/p>\n<p class=\"\">\u201cFor rural communities, value-added products like artisan cheese are used as a counterpoint to commodified agriculture, which has decimated their economies by extracting capital to corporate balance sheets far away and devaluing their raw materials,\u201d Brickley says.\u00a0<\/p>\n<p class=\"\">By relying on support for their high-value cheeses at home and in regional metropolitan markets, Brickley says they have been \u201cable to reverse that flow of capital back to the countryside, creating more vibrant, healthy sustainable communities.\u201d<\/p>\n<p class=\"\">And that\u2019s where the ish comes in. If a cheese is organic, that means it comes from animals that haven\u2019t been treated with hormones or antibiotics, and that the grass or feed they consume was grown organically without chemicals or pesticides. If a cheese is certified humane, it ensures the farming system is pasture-based and does not use problematic crates and small spaces that diminish quality of life and encourage the spread of disease.\u00a0<\/p>\n<p class=\"\">Another certificiation that matters? LEED. The Amish are inherently eco-friendly because their religion and lifestyle requires that they avoid all modern conveniences, which entails eschewing cars and favoring horse-drawn buggies, and generally requires relying on renewable energy for farm production.\u00a0<\/p>\n<p class=\"\">That kind-to-the-earth approach extends to their philosophy regarding animals, says Amish farmer and Goot Essa\u2019s founder John Esh. <a href=\"https:\/\/gootessacheese.com\/\" target=\"_blank\">Goot Essa<\/a> was founded in 2001 by a group of six Amish dairy farmers working together to produce high quality cheese, earning a living that will ensure they can stay on their farms and maintain their lifestyles.\u00a0<\/p>\n<p class=\"\">\u201cWe aim for lower stress, longer life and happy cows,\u201d Esh says. \u201cWe try to keep animals cool during the summer and choosing more heat-resistant breeds, while watching for genetic traits such as feet and leg shape to help with their mobility. Better lives means better cheese.\u201d<\/p>\n<p class=\"\">Quakers, who also have a celebrated culture of cheesemaking, have a foundational spiritual commitment to environmental responsibility. Many actively work to reduce their carbon footprint, with several Quaker organizations divesting from fossil fuels and restricting investment to the lowest carbon businesses.\u00a0<\/p>\n<p class=\"\">In Ireland and England, there is a strong community of Quaker cheesemakers, with <a href=\"https:\/\/www.cashelblue.com\/\" target=\"_blank\">Cashel Blue<\/a> being the most internationally beloved example. Digesters use the cow\u2019s manure to create biogas that can be used as energy via an anaerobic methane digester, instead of allowing that methane to escape into the atmosphere. Yep, we\u2019re talking turning poop into power.<\/p>\n<p class=\"\">At Crave, the energy is fed back into the neighborhood\u2019s energy system. (For every <a href=\"https:\/\/www.cravecheese.com\/sustainability#:~:text=Anaerobic%20Methane%20Digester&amp;text=It%20is%20owned%20by%20Clean%20Fuel%20Crave.&amp;text=Anaerobic%20(oxygen-free)%20digestion,natural%20gas%2C%20thus%20generating%20energy.\" target=\"_blank\">hour<\/a> the system runs, Crave generates enough electricity to power an average Wisconsin home for a month).\u00a0<\/p>\n<p class=\"\">Meanwhile, many cheesemakers\u2014like and <a href=\"https:\/\/www.cravecheese.com\/sustainability\" target=\"_blank\">Crave Cheese<\/a>\u2014are leveraging poop power. Yep, they are taking cow manure and transforming it into renewable energy.\u00a0<\/p>\n<p class=\"\">Speaking of energy, an increasing number of creameries are getting at least some of their power from the sun. <a href=\"https:\/\/www.5spokecreamery.com\/\" target=\"_blank\">5 Spoke Creamery<\/a> in Goshen, N.Y., is at the forefront, and uses solar to <a href=\"https:\/\/www.5spokecreamery.com\/solar-powered\/\">drive<\/a> the entire operation, from cheesemaking to accounting. Now that they\u2019re up and running, the 200 solar panels they installed allows them to make 800 pounds of cheese a day.\u00a0<\/p>\n<p class=\"\">Ivy\u2019s Reserve in Somerset, England, though, takes it to the next level. One of few <a href=\"https:\/\/www.ivys-reserve.com\/carbon-neutral\" target=\"_blank\">carbon-neutral<\/a> cheese companies in the world, they work on their own and suppliers\u2019 farms on land management, regenerative farming and energy use. While there are few\u2014if any\u2014dairy farmers currently sprinkling seaweed over their cows\u2019 post-pasture snack, there is an increasing argument that progressive, environmentally minded ranchers should do just that.\u00a0<\/p>\n<p class=\"\">While cows typically dine on grass or grains, a new long-term study from researchers at University of California, Davis shows that adding seaweed to cattle feed can reduce methane emissions as much as 82%. (The seaweed suppresses a methane-producing enzyme in the cow\u2019s notoriously complex digestive system).\u00a0<\/p>\n<p class=\"\">Over five months, Ermias Kebreab, professor and Sesnon Endowed Chair of the Department of Animal Science and director of the World Food Center and Ph.D. graduate student Breanna Roque added seaweed to the diet of 21 cattle over five months. They tracked weight gain and flatulence levels and found that 3 ounces of seaweed reduced 82% of the methane emissions, without affecting their ability to put on weight.\u00a0<\/p>\n<p class=\"\">The university released its findings in the journal <a href=\"https:\/\/journals.plos.org\/plosone\/article?id=10.1371\/journal.pone.0247820\" target=\"_blank\">PLOS ONE<\/a>, writing that this insight could help ensure a significantly more sustainable road ahead for dairy and beef cattle.
