Biraz daha kat\u0131 olmas\u0131n\u0131 istersek \u00e7\u0131rpt\u0131ktan sonra i\u00e7erisine krema sertle\u015ftiricisi ilave edip \u00e7ok az daha \u00e7\u0131rpabiliriz.<br \/>\nS\u0131v\u0131 haldeki kremay\u0131 ise \u00e7ok \u00e7e\u015fitli kullanabiliriz. Ama krem\u015fanti yapmak istersek 1 su barda\u011f\u0131 kadar s\u0131v\u0131 kremay\u0131 (200 ml) 6-7 \u00e7orba ka\u015f\u0131\u011f\u0131 pudra \u015fekeri ile \u00e7\u0131rparsak yine krem\u015fanti elde edebiliriz. Biraz daha yo\u011fun k\u0131vaml\u0131 olsun istersek 1-2 ka\u015f\u0131k daha pudra \u015fekeri ilave edebiliriz.<\/p>\n<p>YA\u011eLI KREMA ( BUTTERCREAM )<\/p>\n<p>Krem\u015fantiyi sevmeyen i\u00e7in \u00f6nerebilece\u011fim ve pastanelerde en \u00e7ok kullan\u0131lan krema \u00e7e\u015fitlerinden birisidir.<br \/>\n22 cm&#8217;lik bir pasta i\u00e7in ;<\/p>\n<p>125 gr tuzsuz tereya\u011f\u0131 veya margarin(oda s\u0131cakl\u0131\u011f\u0131nda bekletilmi\u015f)<\/p>\n<p>250 gr pudra \u015fekeri<\/p>\n<p>2 \u00e7ay ka\u015f\u0131\u011f\u0131 kaynam\u0131\u015f su<\/p>\n<p>kakaolu yapmak istenirse + 30 gr toz kakao ilave edilir.<\/p>\n<p>\u00d6ncelikle ya\u011f\u0131m\u0131z\u0131 kremsi bir hal alanakadar mikser ile \u00e7\u0131rp\u0131yoruz. Daha sonra pudra \u015fekerini ilave edip ya\u011f\u0131n ve \u015fekerin birbirine iyice kar\u0131\u015fmas\u0131n\u0131 sa\u011fl\u0131yoruz. En son suyumuzu ekleyip k\u0131vam\u0131n\u0131 verene kadar \u00e7\u0131rpmaya devam ediyoruz.<\/p>\n<p>Bu krema 3 ay boyunca derin dondurucuda saklanabilir. Kullanaca\u011f\u0131n\u0131z zaman, bir g\u00fcn \u00f6nceden derin dondurucudan normal buzdolab\u0131na kald\u0131rman\u0131z yeterli olacakt\u0131r.<\/p>\n<p>\u00c7\u0130KOLATALI KREMA<\/p>\n<p>Ya\u011fl\u0131 kremay\u0131 kullanabilece\u011fimiz gibi s\u0131v\u0131 kremadanda bu tip bir krema elde edebiliriz.<\/p>\n<p>100 gr bitter \u00e7ikolatay\u0131 benmaride eritip 1 su barda\u011f\u0131 (200 ml) s\u0131v\u0131 krema ile birlikte \u00e7\u0131rparsak g\u00fczel bir krema elde edebiliriz.<\/p>\n<p>\u00c7\u0130KOLATA GANA\u015e<\/p>\n<p>Son zamanlarda en \u00e7ok kulland\u0131\u011f\u0131m ve \u00e7ok lezzetli buldu\u011fum bir krema \u00e7e\u015fididir. Sacher&#8217;de ve \u00e7o\u011fu \u00e7ikolata pasta kaplamas\u0131nda bu \u00e7e\u015fit gana\u015flar kullan\u0131l\u0131r. \u00d6nemli olan \u00e7ikolatam\u0131z\u0131n lezzeti ve kalitesidir.<br \/>\nYap\u0131m\u0131 \u00e7ok kolayd\u0131r. Birebir \u00f6l\u00e7\u00fc kullan\u0131l\u0131r. Mesela 200 gr \u00e7ikolataya 200 ml s\u0131v\u0131 krema kullan\u0131l\u0131r.<br \/>\n\u00d6ncelikle kremam\u0131z\u0131 kaynatmadan \u0131s\u0131t\u0131r\u0131z. K\u00fc\u00e7\u00fck k\u00fc\u00e7\u00fck kesti\u011fimiz \u00e7ikolatalar\u0131m\u0131z\u0131 bu s\u0131cak kreman\u0131n i\u00e7erisinde devaml\u0131 kar\u0131\u015ft\u0131rarak eritiriz ve 1 saat kadar oda \u0131s\u0131s\u0131nda hafif koyula\u015fmas\u0131n\u0131 bekleyip \u00f6yle pastam\u0131z\u0131 s\u0131var\u0131z..<\/p>\n<p>ICING KAPLAMA ( GLACE ICING )<\/p>\n<p>Daha \u00e7ok kurabiye kaplamas\u0131nda ve cupcakelerin \u00fczerilerini s\u00fcslemek i\u00e7in kullan\u0131l\u0131r. Likit ve parlak bir g\u00f6r\u00fcn\u00fcm\u00fc olur, kurabiyelerin \u00fczerlerinde ise donduktan sonra mat bir g\u00f6r\u00fcn\u00fcm al\u0131rlar.<\/p>\n<p>22 cm&#8217;lik bir pasta i\u00e7in ;<\/p>\n<p>185 gr pudra \u015fekeri<\/p>\n<p>1 \u00e7ay ka\u015f\u0131\u011f\u0131 tuzsuz tereya\u011f\u0131 veya margarin<\/p>\n<p>4-8 \u00e7ay ka\u015f\u0131\u011f\u0131 s\u00fct veya su ( k\u0131vam\u0131na ba\u011fl\u0131 )<\/p>\n<p>iste\u011fe g\u00f6re g\u0131da boyas\u0131 ( toz veya jel )<\/p>\n<p>T\u00fcm malzemeyi \u0131s\u0131ya dayan\u0131kl\u0131 bir kab\u0131n i\u00e7erisine koyal\u0131m. A\u011fz\u0131 geni\u015f bir cezvede su kaynatal\u0131m ve kaynam\u0131\u015f suyun \u00fczerine malzemelerimiz ile dolu kab\u0131 yerle\u015ftirelim ve buhar\u0131nda devaml\u0131 kar\u0131\u015ft\u0131rarak koyula\u015ft\u0131ral\u0131m. \u0130stedi\u011fimiz k\u0131vama gelince buhardan al\u0131p hafif kar\u0131\u015ft\u0131rarak \u0131l\u0131t\u0131p kekin \u00fczerilerine d\u00f6kelim.<\/p>\n<p>E\u011fer kurabiyelerin \u00fczerilerine kullanmak istiyorsan\u0131z sondurmadan birazc\u0131kdaha \u0131l\u0131t\u0131p kullan\u0131n.<\/p>\n<p>ROYAL ICING<\/p>\n<p>Daha \u00e7ok pastalar\u0131n \u00fczerilerine yaz\u0131 yazmak ve \u015fekiller \u00e7izmek i\u00e7in kullan\u0131lan bu sert krema , baz\u0131 \u00f6zel durumlarda pastalar\u0131n \u00fczerilerinide s\u00fcslemektedir. Mesela baz\u0131 \u00f6zel d\u00fc\u011f\u00fcn pastalar\u0131n\u0131n \u00fczerileri daha dayan\u0131kl\u0131 olmas\u0131 i\u00e7in royal icing ile kaplan\u0131r. Bol \u015fekerli bir tad\u0131 vard\u0131r ama g\u00f6r\u00fcnt\u00fcn\u00fcn uzun s\u00fcre bozulmadan ayn\u0131 kalmas\u0131 \u00f6zel bir durumda sizin i\u00e7in \u00f6nemli ise bu kremay\u0131 \u00f6nerebilirim.<\/p>\n<p>3 adet yumurta ak\u0131<br \/>\n1 paket pudra \u015fekeri ( 250 gr)<br \/>\n1\/4 limon suyu<br \/>\nk\u00fcrdan\u0131n ucuyla toz g\u0131da boyas\u0131 ( renklendirmek isterseniz)<\/p>\n<p>Yumurta aklar\u0131 ile pudra \u015fekerini birlikte \u00e7\u0131rp\u0131yoruz. ( yava\u015ftan h\u0131zl\u0131ya) Limonun suyunu da ilave edip krem \u015fanti k\u0131vam\u0131nda bir kar\u0131\u015f\u0131m elde edinceye kadar \u00e7\u0131rpmaya devam ediyoruz. Renklendirmek istersek bu a\u015famadan sonra \u00e7ok az boya ilave edip\u00e7ok az daha \u00e7\u0131rp\u0131youz.<\/p>\n<p>Pasta i\u00e7in : En Derin Sevgi<\/p>\n<p>PASTACI KREMASI<\/p>\n<p>En \u00e7ok kullan\u0131lan krema \u00e7e\u015fitlerinden birisidir. Arzu ederseniz pi\u015ftikten hemen sonra i\u00e7erisine k\u0131vam vermesi i\u00e7in \u00e7ok az margarin ilave edip kar\u0131\u015ft\u0131rabilirsiniz. Ama ben margarin kullanmay\u0131 tercih etmiyorum.
