Give it all the stars, along with all of my money, I say. When I first learned of its existence, I informed my London-based boyfriend that we would be going there at our earliest convenience, and, because the universe is generous, (and because the BF is equally cheese-enthusiastic, especially for blues,) it was scarcely a month until travel aligned to make it happen.<\/p>\n<p class=\"\">You may already be familiar with the format of a \u201crevolving\u201d sushi bar, where all seats in the restaurant are organized around a conveyor belt, ferrying plates of rolls and nigiri along its path for patrons to simply pick off and enjoy at their own pace and volume. Now, replace \u201crolls and nigiri\u201d with \u201ccheese and accoutrements.\u201d The genuine glee I felt when witnessing cheese-filled domes moving around the space in their elegant, carousel choreography cannot be understated; much squealing was involved. Not since fondue has restaurant cheese been this fun and interactive, and I say that as someone who used to push a tableside cheese trolley around a fine dining restaurant.<\/p>\n<p>\u00a0<\/p>\n<h2>The Space<\/h2>\n<figure class=\"sqs-block-image-figure              intrinsic\"><\/p>\n<p>                  <img decoding=\"async\" class=\"thumb-image\" data-image=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5eb43938f468c330e7d8d665\/0818d9e9-7cfb-47c3-8d3f-46e70950fff0\/Pick+and+Cheese+bar+interior.jpg\" data-image-dimensions=\"4080x3072\" data-image-focal-point=\"0.5,0.5\" alt=\"Pick &amp; Cheese in Covent Garden\u2019s Seven Dials Market\" data-load=\"false\" data-image-id=\"636971f55a40f021ebc072fe\" data-type=\"image\" src=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5eb43938f468c330e7d8d665\/0818d9e9-7cfb-47c3-8d3f-46e70950fff0\/Pick and Cheese bar interior.jpg?format=1000w\"><\/p>\n<\/figure>\n<p class=\"\">Pick &amp; Cheese, located in Covent Garden\u2019s <a href=\"https:\/\/www.sevendialsmarket.com\/\" target=\"_blank\" rel=\"noopener\"><span>Seven Dials Market<\/span><\/a>, is owned by Mathew Carver, a champion of British cheese and proprietor of several London cheese restaurants, including <a href=\"https:\/\/www.thecheesebar.com\/\" target=\"_blank\" rel=\"noopener\"><span>The Cheese Bar<\/span><\/a>, <a href=\"https:\/\/www.thecheesebar.com\/paddington\/\" target=\"_blank\" rel=\"noopener\"><span>The Cheese Barge<\/span><\/a>, and a retail cheese shop called <a href=\"https:\/\/www.thecheesebar.com\/funk\/\" target=\"_blank\" rel=\"noopener\"><span>Funk<\/span><\/a>. Carver obviously has his finger on the pulse of an ever-growing cheese scene in need of new followers, committed to cheese experiences that feel more like carnivals than temples. You hardly have to be a turophile to be intrigued by cheese plates traveling around the room on a dairy-go-round, and the open format of Pick &amp; Cheese commands the pause of just about everyone who passes by. (You\u2019ll need a reservation during prime times.)<\/p>\n<p class=\"\">It doesn\u2019t hurt that such a unique concept is also housed in one of the coolest food halls I\u2019ve seen: Seven Dials Market is located in a former banana warehouse, and yes, the banana imagery is rampant. The ground floor includes several sit-down restaurants, including Pick &amp; Cheese, and the basement is outfitted more like a food hall, with several counter service restaurants, a bar, and communal table seating.<\/p>\n<p>\u00a0<\/p>\n<h2>The Cheese<\/h2>\n<figure class=\"sqs-block-image-figure              intrinsic\"><\/p>\n<p>                  <img decoding=\"async\" class=\"thumb-image\" data-image=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5eb43938f468c330e7d8d665\/1cd6eac0-27c3-4dd5-ac8b-610b109706ca\/PIck+and+Cheese+domed+cheese+plates.jpg\" data-image-dimensions=\"2000x2656\" data-image-focal-point=\"0.5,0.5\" alt=\"PIck and Cheese domed cheese plates\" data-load=\"false\" data-image-id=\"63697237ea3eff273eb2f431\" data-type=\"image\" src=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5eb43938f468c330e7d8d665\/1cd6eac0-27c3-4dd5-ac8b-610b109706ca\/PIck and Cheese domed cheese plates.jpg?format=1000w\"><\/p>\n<\/figure>\n<p data-rte-preserve-empty=\"true\" class=\"\">\n<p class=\"\">The cheese selections at Pick &amp; Cheese run the gamut from British stalwarts like <a href=\"https:\/\/www.keenscheddar.co.uk\/\" target=\"_blank\" rel=\"noopener\"><span>Keen\u2019s Cheddar<\/span><\/a>, <a href=\"https:\/\/www.cheese.com\/cheshire\/\" target=\"_blank\" rel=\"noopener\"><span>Cheshire<\/span><\/a>, and <a href=\"https:\/\/www.stiltoncheese.co.uk\/\" target=\"_blank\" rel=\"noopener\"><span>Stilton<\/span><\/a>, to small-batch or avant-garde cheeses from up-and-coming British (and the occasional Irish) cheesemakers. A few favorites included <a href=\"https:\/\/cheeseshopnottingham.co.uk\/product\/rachel\/\" target=\"_blank\" rel=\"noopener\"><span>Rachel<\/span><\/a>, a firm, washed-rind, goat\u2019s cheese named for the cheesemaker\u2019s ex-girlfriend; <a href=\"https:\/\/www.cotswoldcheese.com\/products\/ashcombe\" target=\"_blank\" rel=\"noopener\"><span>Ashcombe<\/span><\/a>, a morbier-inspired cheese dreamt up during lockdown; and <a href=\"https:\/\/www.stjamescheese.co.uk\/\" target=\"_blank\" rel=\"noopener\"><span>St. James<\/span><\/a>, an unpasteurized, sheep milk number with earthy, brined rind.\u00a0<\/p>\n<p class=\"\">I\u2019m all for a limited, well-curated cheese plate in its own right, but my favorite cheese experiences are often about a well-executed pairing, and Pick &amp; Cheese offers this up in spades on a (revolving) platter. Each of its 2 dozen cheeses is paired with a perfect match: <a href=\"http:\/\/stichelton.co.uk\/\" target=\"_blank\" rel=\"noopener\"><span>Stichelton<\/span><\/a> blue with a hazelnut brownie, a <a href=\"https:\/\/chorltoncheesemongers.co.uk\/products\/holker-ricotta\" target=\"_blank\" rel=\"noopener\"><span>sheep\u2019s ricotta<\/span><\/a> with amarena cherries, and <a href=\"https:\/\/www.nealsyarddairy.co.uk\/products\/gorwydd-caerphilly\" target=\"_blank\" rel=\"noopener\"><span>Gorwydd Caerphilly<\/span><\/a> with piccalilli, a pickled vegetable relish with a tangy mustard sauce.<\/p>\n<p>\u00a0<\/p>\n<h2>The Experience<\/h2>\n<figure class=\"sqs-block-image-figure              intrinsic\"><\/p>\n<p>                  <img decoding=\"async\" class=\"thumb-image\" data-image=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5eb43938f468c330e7d8d665\/8299c9fa-9998-45db-8637-2bcea04ab93d\/Pick+and+Cheese+plate.jpg\" data-image-dimensions=\"3072x4080\" data-image-focal-point=\"0.5,0.5\" alt=\"Pick and Cheese plate\" data-load=\"false\" data-image-id=\"63697281ea74701f3403f2b6\" data-type=\"image\" src=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5eb43938f468c330e7d8d665\/8299c9fa-9998-45db-8637-2bcea04ab93d\/Pick and Cheese plate.jpg?format=1000w\"><\/p>\n<\/figure>\n<p class=\"\">Each plate includes a small portion of cheese with its designated accompaniment, numbered to correspond with a printed menu, complete with symbols to indicate animal milk, milk condition, and rennet type, but I found that the real fun of it was just giving in and picking off whatever looked good, and yes, it\u2019s difficult to restrain oneself when beautiful cheeses are continually whizzing by your face, threatening to get away if you don\u2019t grab it. (Come hungry, and come with friends for maximum impact.) In fact, because there was no question that I\u2019d love all the cheeses, I found myself gravitating to those whose accompaniments I was most intrigued by and which spoke to the kind of cheese that might be involved: melted leeks with the aforementioned, savory St. James, cumin roasted pineapple with a fruity <a href=\"http:\/\/www.cooleacheese.com\/\" target=\"_blank\" rel=\"noopener\"><span>Coolea<\/span><\/a>, and candied peanuts with <a href=\"https:\/\/bruernfarms.co.uk\/\" target=\"_blank\" rel=\"noopener\"><span>Yarlington<\/span><\/a>, a cider-washed stinker.<\/p>\n<p class=\"\">The plates are color-coordinated according to price, ranging from about \u00a34 to \u00a37 each. Spinning around the bar, the cheeses are all perfectly tempered, but also have color-coordinated stickers to alert the staff as to when they were placed on the conveyor, so they may be removed after a certain period of time, so late-night diners needn\u2019t worry that their cheese might give them the spins from revolving since lunch.<\/p>\n<p class=\"\">Taking a few recommendations from the staff, and from an intrepid solo diner, there were a couple of cheeses we were committed to finding, one of which evaded us: a candied, <a href=\"https:\/\/www.cornishgouda.co.uk\/about-us\/\" target=\"_blank\" rel=\"noopener\"><span>Cornish gouda<\/span><\/a> paired with a clotted cream fudge. Only when reviewing my photographs later did I learn that one had passed us by early on, when I was still overwhelmed by glee and trying to make a game plan to taste as much and as varied a lineup as possible. It was the one that literally got away. I wasn\u2019t concerned, however.
